Mishu been harping me to make homemade pizza.Last Friday she said "mommy it's been a long time I didn't eat your pizza"!! OK..so pizza I made but I realize the active yeast I have in fridge was expired.The downside is when I bought the vacuum double package yeast from BJ's wholesale,the yeast comes in large quantity.The upside is the yeast sold in BJ's is awesomely cheap compare with individual packaging that sold in any supermarket.We like New York style thin crust pizza than the thick crust..So I "google" to look for thin crust and found a 5 stars dough recipe at americanfood.Eliot said it's the best pizza I made..I have some leftover frankfurter,so used it in one of the pie.We also love spicy chicken,so I throw some spicy sauce with boneless chicken in another pie..What a delicious pizza dinner for us!!
Ingredients for Dough:
2 1/4 teaspoon (1 package) instant dry active yeast
1 cup warm water (not hot!)
1/2 tablespoon sugar
3 cups bread flour(high protein flour), or as needed
2 tablespoon olive oil or regular cooking oil
1 1/2 teaspoon salt
Topping:*optional*
1 lb boneless chicken ,cut cubes
4 medium onion,peeled and sliced
6 frankfurter or sausage,cut or sliced
2 cups shredded yellow cheese or more
2 cups shredded mozzarella cheese or more
1 bottle spicy sauce
1 bottle pasta sauce or more
Method:
1:Add the water, yeast, sugar, and a 1/2 cup of the flour into a mixing bowl. Stir well and let sit for 20 minutes. It will get bubbly.
2:Add olive oil, salt, and 2 cups of the flour, and mix with a wooden spoon until it's together enough to turn out on to a lightly floured work surface to knead.
3:Knead for about 10 minutes, while adding more flour a little at a time, to produce a soft, elastic and slightly sticky dough. Do not add too much flour, just enough to keep it from sticking to the work surface as you knead.
4:Form the dough into a ball and place in a large oiled bowl. Drizzle a few drops of oil and coat the top of dough to prevent the surface from becoming dry.
5:Cover with a kitchen towel and place in a warm spot for 2 hours, or until the dough doubles in size.
6:Punch down the dough and knead for few minutes.Divide the dough into 3 balls,spread the dough in pie shape and place on the pan or oven brick pan.Let it rest for 15-20 minutes.Preheat oven to 480 F.Meantime, heat skillet with spicy sauce and boneless chicken.Add in 1 tbsp sugar,cook for 3 minutes.
7:Top your favorite topping on the dough pies.Bake in preheat for 20-30 minutes.Remove from oven.Slice and serve.

I have an extra packet of yeast which I bought from Sam's club two months ago. Like you said it came in two large packet so I will give it to you when I see you next mongh. Please remind me yea :) By the way, great looking pizza.

Thanks for your kind word :)I was thinking the same when I bought the yeast from BJ's..I was going to bring the another pack to you..haha...I still have a twin pack yeast which expired..later I'm going to return to BJ's.
