Ingredients:
4 over riped banana,mashed
3 cups cake flour,sifted
1/2 tsp salt ,sifted
2 tsp vanilla extract
2 tsp banana extract
2 tsp baking soda ,sifted
3 large eggs
100 ml milk
3/4 cup butter,softened
2 cups granulated sugar *reduce sugar if you want less sweet*

Method:
1:Preheat oven to 325F. Prepare a cake mould or cake bundt.Combine cake flour,salt and baking soda sieved,set aside.

2:Beat butter and sugar in mixer at high speed until light and fluffy.Reduce speed,add in egg one by one,mix well..Add in vanilla extract ,banana extract and milk.Beat for another 30 second before add in banana,mix well.
3:Add in flour mixture,fold in the flour with the other batter ,mix well.Pour the batter into the bundt mould or your desire cake mould.
4:Bake for 45 minutes or until the toothpick inserted comes out clean.Remove cake from oven,cool cake in mould for 15 or longer before remove from mould completely.Cut and serve with tea or coffee.

a good way to make use of the ripe bananas
Normally during cold weather the banana don't get ripe fast so we get to finish it all up but comes summer time it will turn black quick so I will use it in baking. I think you miss out the no of eggs in the recipe :)
Looks great and it's one of my favorite cake to make as well.
A very delightful cake. Nice if I can have a slice of this cake.

Overripe bananas can still be cooked to a tasty banana cake.
