One of my favourite seafood is shrimp....Shrimp is easy to cook and abundant..But to find a tasty shrimp recipe is not hard at all.For me I like any type of shrimp cooking as long as the shrimp is meaty,fresh,elastic and bouncy..In a short simple word,the shrimp should not taste like iodine or tasteless.I created this dish when I found I still have some roasted sweetness coconut flake sitting around in my pantry..If you're shrimp lover like me,why not try out this shrimp coconut flakes?
Ingredients:
1/2 pound large shrimp,de-shelled and deveined
1 tsp salt
1 tsp ground pepper
1/4 cup all purpose flour
1/4 cup rice flour
1 egg
4 tbsp water
1 cup oil for frying
mayonnaise
1 cup roasted sweetened coconut flake
Method:
1:Heat oil in skillet or fryer at 350 F.Combine cleaned shrimp,salt and ground pepper in a medium bowl.Beat egg until frothy,then add in with water,all purpose flour and rice flour ,mix until well combine.
2:Coat seasoning shrimp into the flour mixture,dredge the tail into hot oil.Fry until golden brown.Remove cooed shrimp from fryer onto a paper towel to absorb excess oil.
3:Place cooked shrimp on a plate before drizzle with mayonnaise and sprinkle with roasted coconut.Serve warm as appetizer or snack.
