
Last week was Mishu birthday and she celebrated her birthday with her classmate at school.Nowadays her school have a very strict policy regarding food that allowed in the school by the parents..Her teacher said the only food that are allowed is muffin,fruit,vegetables and pudding or jello..It's sad there is no cake or cupcake are allowed for us to celebrate her Birthday at school but what can we do..Muffin is better then nothing at all,right? I adapted this blueberries muffin recipe
here!! but the batter is quite thick so I added milk and extra butter into this recipe.I have to double the ingredients to make enough muffins for the class..Since I have mixer, I used mixer to mix all the ingredients then folding the batter by hands...to make my life easier ◘:) The blueberries muffin is soft and moist♥..
Ingredients:
2 cups all-purpose flour
1 cup white sugar
1 tsp baking soda
1 tsp baking powder 100 ml milk
1 (6 oz) container blueberry and strawberry flavored yogurt
1 egg
1 tsp vanilla extract
5 tbsp butter, melted
1 punnet blueberries,4 oz
Method:
1.Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
2.Stir together flour, baking soda and baking powder,set aside. Beat sugar and butter in a mixer until light and fluffy,then add in egg, yogurt,milk and vanilla. Stir in flour mixtures together until combined,then fold in blueberries. Scoop into prepared muffin cups.
3.Bake in preheated oven for 25 minutes or until lightly golden brown.

there is some leftover muffin from school ,so later in the day I top the muffin with some cream cheese frosting and sprinkle before let her blow her candle on it..

Mishu loves Minnie Mouse character,so her Birthday theme was Minnie and Mickey Mouse..
