Blueberries and Banana Cupcakes with Cream Cheese Frosting

I bought 2 pound of banana from BJ's wholesale for $1.35 ..2 weeks ago.Too bad nobody in the house want to eat fresh banana.That 3 pounds of banana sitting in the fruit basket until fruit flies all over my kitchen. What should I do with all the 3 pounds?Of course baking,but I only use half of the overripe banana....the rest have to go to trash...wasting $$$ huh?..Here is my Banana Blueberries Cupcakes with Cream cheese Frosting..

Ingredients :

2 cups of flour

1 tbsp of baking powder

1/2 tsp of salt

4 large eggs

2 stick butter

1 cup of sugar

1 tsp vanilla

1 punnet of blueberries

3 small overripe banana(mashed)


1. Preheat oven to 350 degrees. Prepare cupcake cup into muffin cup.

2. Sift the flour, baking powder and salt into a bowl, and set aside. In a mixer beat the butter and sugar until light and fluffy.

3. Beat in the eggs one at a time follow by vanilla. Then slowly beat in flour in 3 addition alternately with mashed banana.

4. Lastly fold in the blueberries. Pour batter into prepared cupcake pan. Bake for 35 to 45 or until golden brown.

5:Let it cool down completely before icing with frosting(optional)

I didn't add any milk or yogurt coz I sub with banana..If you like you can add 100 ml into the batter.I reduce the sugar coz I top my cupcake with icing.Adjust your sugar if you don't top your cake with frosting.

Hi, I love your blog. discovered it a while ago and have been reading it ever since. I am a fellow m'sian and living here in Arkansas. about your bananas, you don't have to throw the ripe ones away. just peel and put in ziploc bag , freeze them and use when needed. that is what I do with over ripe bananas and use them whenever I want to make banana bread/muffin. In fact, that is what I do with all my fruits that we cannot eat up in time. instead of dumping them out, the chinese in me dont want to waste so everything goes in the freezer and I can use in baking or smoothies.

thanks for the tip for not using milk or reducing sugar when using sweet fruit/frostings...

i never use frostings but sometimes i get confused with the amount of sugar to put in...and in baking...i cant just add more later hehe

thanks for your suggestion..I keep thinking fresh fruit is cheap why should I frezze it since I can get it easily..You're right I should save in ziploc bag and use it for baking..Thanks for the tips:))

yes,I like to add more ingrendients in any thing I cook!!hahaha!
