Ingredients:
500 gm minced pork
10 clean and deviened minced shrimp or cut small
1 tsp white pepper
1 tsp oyster sauce
1 tsp sugar
1 tbsp sesame oil
1 egg white
1 stalk scallion
1 tbsp cornstarch
1 sliced kraft yellow cheese(cut cube)
15 sheet wanton wrapper(round)
Method:
1:Prepared a large bowl and mixed well above ingredients except cheese and wanton wrapper
2:Take each wanton wrapper and wrap around your palm with the meat filling,about 2 tsp each wrapping.
3:Use candle holder to hold your shumai as show below.Arrange your wrapper evenly around the candle holder
4:Prepare a pot with rolling boil water at high heat with a double boiler.Steam shumai for 10 -15 minutes.
5:Place each cut cheese cube on the shumai and steam for another 2-3 minutes.Remove the candle holder slowly without breaking the fragile shumai wrapper.Ready to serve warm. I used candle holder as the mold,isn't a great idea?.I don't have to worried if the shumai going to get out of shape or deflated.
Remember to clean your used candle holder with hot water before use.
I used my double boiler pot to steam the shumai.You can use any pot or wok with lid as long as the candle holder doesn't touch the rolling boil water
Note:
You can replaced minced pork with beef,turkey ,chicken or only shrimp for shumai.Remember,you must get round shape wanton wrapper not the square!!If you like deep dried shumai,mix the cheese with the ingredients and don't steam too long.Throw into clean hot oil until golden brown.Serve it hot with mustard!.Enjoy!!

When I see your shumai post and Gertrude post months ago,I keep thinking how to make mine first shumai without falling apart,then I get this idea from my candle holder which I bought from Ikea's..

if you don't have candle holder never mind,get anything is small and round to hold the wrap..I think it will do..try it.
