I bought a pound of Chinese sausage when I was in Chinatown...The only menu I know for cooking Chinese sausage is Fried Rice!!..Of course ,there are plenty of other delicious recipe I can cook with Chinese sausage but never try it yet..Maybe one this good day,I will steam salted fish with Chinese sausage or cook claypot rice with Chinese sausage.. I used my leftover white steam rice for this yummy delicious fried rice.It's about 2 medium bowl.I prepared sliced boneless chicken,peel and clean 10-15 shrimp,3 egg,cut scallion ,green pea and Chinese sausage ...Since I used Chinese sausage as my ingredient,I didn't use any oil..After removed the Chinese sausage skin,cut and fried in high heat wok or skillet.Fried for 3-5 minutes or until brown.Removed Chinese sausage from wok,set aside.Add in the egg and scramble it for another 2 minutes.Removed the scramble egg ,then add in chicken and shrimp,stir for 2 minutes before add in the white rice.Reduce the heat to medium,add in fish sauce,chicken bouillon and some oyster sauce..Mixed it well and add all the other ingredients together.Stir fried for another 5 minutes,before serve.Sprinkle some cut scallion.

I love the Lap Chiong too with Fried Rice too.
I used to try Steaming Chicken with Lap Chiong... taste really good!
Aarrggghh...looks so good, I'm sooo hungry by looking at it.
Saw your yummy fried rice this morning and so beh tahan already. Cook some for myself for lunch minus the lap cheong. Not a fan of it :)

Beachlover, you can try making "sticky rice chicken" with the lap cheong also. The leftover freezes well as well. hmm... I can smell the fragrance in my living room now.

Just store 'lap cheong" in freezer if you don't use a lot..Can tahan very lama one..Just use 2 for fried rice and you don't have to run to store everytime you wanna to cook.If you visit Queens or Chinatown get it from any supermarket or meat store.

I love fried rice but I seldom cook it at home coz I don't like to wash the wok after that! I just cook my "fried rice" in the rice cooker. :P

fried rice in rice cooker??..hmmmm must try your kung fu!! lol..I remember my mom cook her claypot rice in rice cooker too..but it's taste different ,right?.I also malas to wash wok,so I used hard anodize non stick wok!!..
beachlover, the "sticky rice chicken" I am referring to is the one they sell in Malaysia along with the char siu pau, it is made with dark soy sauce punya...i m getting hungry just thinking of it :p
