I had 3 over riped banana hanging on my banana stand in my kitchen,hubby ask me to throw away.Why throw away??..It's perfect for baking,right??.Well,I better make some cake from this over ripped banana.How about some cupcake??.I want to practise icing decoration on the cake ,I bought few icing piping but don't have the chance to use yet.I used the recipe from my recent bought baking book.Of course ,I make some alternation:) How it's look??..My first time doing icing piping.I still try to figure out which design is for which flower.
2 cups (300g) all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3/4 cup( 200g) butter
1 cup (200g) sugar
2 large egg
2 cup (225g) mashed banana
4 tsp yogurt(I change to sour cream)
4 tsp yogurt(I change to sour cream)
1 tsp finely grated lemon ( I replaced with chocolate)
1:Preheat the oven to 350F/180C.Prepare muffin cup in muffin pan.
2:Sift the flour,baking powder,baking soda and salt into a large bowl.Beat the butter and sugar in a large bowl with an electric mixer at medium speed until creamy.Add the eggs,one at a time,beating until just blended after each addition.With mixer at low speed,gradually beat in the banana,grated chocolate and dry ingredients,alternating with the sour cream
3:Spoon the batter into the prepare muffin pan.Bake for 55 minutes,or until a toothpick inserted into the center comes out clean..But since I used muffin pan,I bake for 35 minutes instead.Cool the cake in the pan for 30 minutes or completely before decorate with icing.

Looks delicious. Who could resist a banana chocolate cup cake. :) My Little One will grab one of those immediately and eat it. :)
Nice way to use overly ripe bananas. I wonder if I don't bake, what can I use overly ripe bananas for?
The cup cakes look so sinful especially with all the frosting. I will do the same thing with over-ripe banana but normally I will just make the bread. Easier :) :)

good job on the icing... was it fun decorating the cupcakes? I have the pipings but never used it.. must kick my butt into doing something with it.
when you go back to Msia, you shd get those ovalettes, chocolate and coffe emulcos, bread improvers, and konnyaku powder .. which you can't get here and sell them here.

How about kuih kodok??..Just mixed with some flour,egg ,banana and sugar.Deep fried it until golden brown...hmmmm..now make me wanna to eat kuih kodok too!!.How about Pengat pisang??.that is good too.Did you install your oven yet?.
