Cereal, Cranberry and Oatmeal Cookies

We still have plenty of cereal sitting around in the kitchen.I only bought cereal when there are on sale or discount coupon offered. On top of that,a box of cereal from wholesale store(BJ's) usually comes in twin packets.Actually, the cereal is for Mishu  but she refused to have cereal for breakfast,said no time in the morning or rather have grilled cheese sandwich for breakfast.She not a cereal person either am I.Instead of trashing away all my open box cereal,I used it for my Christmas cookies.This recipe is really good and easy to follow.Most of the people we gave this cookies said this cereal cookies taste delicious!!


1 1/4 cups all purpose flour
1/2 tsp cream of tartar
1/2 tsp baking soda
1/2 cup ( 1 stick) butter,softened
1/2 granulated sugar
1/2 cup brown sugar
1 large egg
1/2 tsp vanilla extract

Add ins
1 1/2 cups cornflakes,or more
1 cup quick oatmeal
1 cup dried cranberry

1:Preheat oven to 375 F.Prepare 2 cookies sheets with liner or ungreased.
2:Combine baking soda,flour and cream of tartar in a medium bowl,sieved and set aside.
3:Beat sugar and butter in mixer at high speed until light and fluffy.Add in egg and vanilla extract,beat well.
4:Gradually add flour mixture into the butter mixture until blended.Stir in oatmeal,cranberry and cereal.
5:Drop rounded tablespoon mounds of dough on the cookies sheet 2 inches apart.(or use hand to round the dough in ball ,coat some cereal on the dough before drop the dough on the cookies sheet)

6:Bake for 10-12 minutes or until edges are golden brown.Remove from the oven and let it cool for 2 minutes.Transfer to a rack to cool completely before store in airtight container.
