Blueberry is relatively cheap everywhere.Nowadays,I realized we don't have to wait for summer for abundant of berries.We can get strawberry,blueberry and blackberries in any season all year long.I preferred to use blueberry for butter cake.This type of butter is really suitable for any berries especially blueberry.I adapted this recipe from Alex Goh cookbook.
250 gm unsalted butter,room temperature
230 gm granulated sugar
1 tsp vanilla essence
210 gm all purpose flour
1 tsp baking powder
1 punnet blueberry,washed and drained
1: Preheat oven to 375 F.Prepare 9 inch round pan with parchment paper.Sieve flour and baking powder in a medium bowl.
2:Cream butter and sugar in a mixer at high speed until light and smooth.Add in vanilla essence and eggs one by one,mix well for about 1 minute.Reduce speed to low,pour in flour and baking powder,beat for 30 seconds.
3:Fold in blueberry,pour the batter into the prepared round pan.Use a spatula to spread the batter to make it even before place in the oven.
4:Bake in the middle rack for 50-60 minutes.Remove from oven ,test with a skewer which should come out clean when cake is cooked.Place cake on wire rack too cool before cut and serve.
