It's been awhile since I make any home bread at home.Our weather is still cold and windy,so baking during this season is really suitable ,especially the aroma from the oven when spread all over the house is really comforting and homey.I adapted this recipe from chef Khoo See Yew's DIY Home Bread book.The recipe is simple and the step to step is easy to follow as well.If you're a beginner and into baking this recipe is ideal for you!!
300 gm bread flour or high protein flour
20 gm butter
5 gm milk powder
5 gm instant yeast
2.5 gm bread improver
2.5 m salt
170 gm cold water
15 gm or 1 egg
60 gm condensed milk
1 egg + 2 tbsp water for brushing
2 cups shredded yellow cheese
4-5 tbsp crushed roasted almond
1:Combined condensed milk,egg,cold water,yeast and salt in a mixing bowl,mix well.Use dough hook and whisk at medium speed.
2:Add in sifted flour,milk powder and improver,knead into a dough.Finally add in butter,knead into a fine dough,rest for 30 minutes.
3:Divide the dough into 2 portions.Roll the dough flat,sprinkle with shredded cheese,roll up like swiss roll.Place the dough into prepared lined moulds or pans (4x4x6) with seam down.
4:Let's it's rise double in size,brush the top with egg wash then sprinkle the remaining shredded cheese on the top,follow by crushed roasted almond.
5:Preheat oven to 375 F or 180 C.Bake both for 30 minutes.
