I made a bunch of banana and chocolate chips muffin for Mishu's classmate on the day of her birthday. Nowadays the new rules for any school for birthday is so strict.No cupcake with frosting or topping,candies or soda are allowed for any birthday party held in class or school.So the best we can do was to bring muffin, pretzel,fruit and juices if we want to celebrate our child birthday in the classroom.Long story short,I promised Mishu to brings some snack to her school.One the snack to replaced cupcake was muffin.I wanted the muffin to be more moist and fun ,so I added some milk ,yogurt and chocolate chips.The kids loves it!!
3 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
2 tsp salt
2 bananas, mashed
1 cup or 4 oz strawberry flavor yogurt
100 ml milk
1 cup white sugar
2 egg, lightly beaten
1/2 cup butter, softened
3/4 cup packed brown sugar
5 tbsp all-purpose flour,plus extra
1 tsp ground cinnamon
4 tbsp or 1/2 stick butter
1:Preheat oven to 375 degrees F (190 degrees C). Prepare 12 regular and 18 small muffin papers or cups.In a large bowl, mix together flour, baking soda, baking powder and salt.
2:In another mixing bowl, beat together bananas, sugar, eggs and butter. Stir the banana mixture,milk and yogurt into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3:In a small bowl, mix together brown sugar,flour and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4:Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
