Roasted Turkey with Shredded Mexican Cheese on Artisan Roll

As usual we had roasted Turkey for Thanksgiving dinner.Of course,we can't finish the whole bird in one dinner even though I choose the smallest bird.I tried several recipe for the leftover turkey.One of my favorite and simple recipe is this :Roasted Turkey with Shredded Mexican Cheese on Artisan Roll!!





Ingredients:
1 cup shredded turkey meat,chopped
3-4 tbsp mayonnaise
1 small onion,peeled and chopped
1/2 cup shredded 4 cheese Mexican
salt to taste




5 Artisan roll,cut 1/2 and grilled



Method:
1:Combine all the ingredients except roll in a medium bowl,mix well.Add in salt.Check the seasoning.
2:Cut and grill the roll for 5 minutes.Scoop 1 tbsp turkey mixture on the roll.
3:Serve as snack or appetizer.

Pandan Marble Chiffon Cupcake

Instead of whole cake I make them into cuppies because we're giving the cuppies as gift to Mishu's Chinese school teachers and parents. The special of this recipe is that it's doesn't have tartar cream and baking powder which is healthy because it's has all natural ingredients.







Ingredients:
1/2 cup cake flour
1/2 cup all purpose flour
4 large eggs yolk(room temperature)
5 tbsp sugar
180 ml coconut milk
100 ml vegetable oil

2 tbsp pandan flavor paste


Meringue:
4 large egg white(room temperature)
1 tbsp corn flour
1/2 cup sugar





Method:
1:Preheat oven to 330 F.Sift flour twice. Combine egg yolks and sugar in a bowl and mix well. Add water and vegetable oil and blend together. Add flour and mix well with a hand whisk. Set aside.
2: Combine sugar and corn flour. Beat egg whites until foamy. Add half the sugar and flour mixture and continue beating for a few minutes, then add remaining sugar and flour mixture and beat until egg whites are glossy, with stiff peaks.
3:Add one third of meringue to egg yolk mixture and fold in lightly, then add remaining meringue and fold to incorporate completely. Using a rubber spatula and fold the mixture well.
4:Take 1/4 of the plain batter and mix with the pandan paste together in a small container.Prepare cupcake liners in 2 muffin pans.Spoon plain batter into the paper cups until 1/2 level of the cup,then spoon 1-2 tbsp pandan batter on the top.Continue the same process till all the batters are used up. Use a chopstick to stir the batter gently to create swirl. Smooth the surface with a rubber spatula.
5:Place in the oven at the middle rack and bake for about 20-25 minutes.
When cake is done, remove from oven and leave cake to cool in pan for 5 minutes before remove to wire rack..

Sauteed Broccoli Rabe with Garlic and Anchovies

Broccoli Rabe was on sale a week before Hurricane Sandy. I bought 2 bunch of these fresh ,crisp and green broccoli. The price is relatively cheap during these season.The best way to cook these broccoli rabe is sauteed with garlic and anchovies!!




Ingredients:
1 bunch of rabe broccoli about 1 1/2 lb,remove the end stump about 2 inch and trimmed
3-4 cloves garlic,peeled and slice
50 gm fried anchovies
salt to taste
1 tbsp chicken boullion powder
2 tbsp corn oil




Method:
1:Prepare water in a medium stock pot at high heat.Bring water to boil add a drop of oil and all the trimmed rabe broccoli in the bubbly boil water.Cook the rabe broccoli for 10-15 minutes or until soft.Removed rabe broccoli into a seive,set aside.
2:Heat large skillet or pan with corn oil at medium high heat.Add in corn oil and sliced garlic in the skillet,fry until golden brown.Toss in rabe broccoli ,salt and chicken bouillon power,mix well.Check the seasoning..
3:Lastly toss in fried anchovies and stir for few second before dish out and serve warm.

Homemade Garlic Bread

I bought 3 loafs of Italian bread for $2.50.The store sold one for $0.99 and 3 for $2.50.Italian bread must eat within one or two days before goes stale..Of course,we can't finish 3 loaf in two days.In order for the loaf to maintain it's freshness,I have a weird idea to make garlic bread myself since we still  have 1 1/2 loaf left..Mishu and hubby love this garlic bread dearly..Both of them rush to grab it immediately when it's came out from oven.







 Ingredients:
1 loaf Italian bread,but into 2 pieces and slit in between into half
2 bulbs of fresh garlic,peeled and minced
1 stick butter
1 tsp salt

 Method:
1:Combine butter,garlic and salt in a medium bowl,mix well.Preheat oven to 325 F.Prepare baking sheet with wire rack.
2:Use butter knife to spread the garlic mixture all over the cut loaf..Grill for 5 minutes or until golden brown.
3:Serve warm.

Baked Spaghetti with Pork Cutlet

I intended to post this entry last week when Hurricane Sandy is coming but unfortunately in the middle of uploading the photos,I had power outages.It's took  almost a week for our electricity to come back.We been living in the dark with flashlights and candles for 6 days.I really appreciated when the power came back.Long story short ,let's me start  this post with this delicious baked spaghetti pork cutlet for now.








Ingredients:
1/2 pack spaghetti ,cook accordingly to the instruction on the package.
2 cans or 1 bottle large Ragu pasta sauce (any type)I used traditional
1 cup shredded mozzarella cheese
1 lb mozzarella block,cut cubes
2 cups shredded yellow cheese
1 cup grated pecorino romano


Pork Cutlet:
4 pieces pork tenderloin ,about 1 1/2 inch each
1 cup all purpose flour
1 tbsp salt
1 tbsp ground black pepper
1 egg + 1/4 cup milk (mixture)
1/2 cup canola oil


Method:
1:Pounded the pork cutlet with meat tenderizer,then run with salt and pepper set aside for an hour or so.
2:Boil spaghetti accordingly to the instruction on the back of the package,set aside.
3:Heat skillet with oil at medium heat about 350 F.Dip pounded pork with egg mixture before coated with all purpose flour.Place coated pork in the hot oil,fry each side for about 3-5 minutes,dish out and set aside.
4:Preheat oven to 400 F.Prepare a large 9x13 baking dish and oil the dish with butter or oil,place 2 handful cooked spaghetti on the dish,spread it out.Spread 1/4 bottle pasta sauce over the pasta,then place 2 pieces pork cutlet,spread some pasta sauce on the pork cutlet.Spread some shredded yellow cheese , mozzarella cheese and some grated cheese before top with the rest of spaghetti.Repeat the same step for the rest of pasta sauce and pork cutlet.Lastly top with mozzarella cubes.
5:Bake the pasta in oven for 30 minutes or until the top lightly golden brown..Remove from oven.Cut and serve warm..
