Chicken Taco

Taco is one of our favorite snack or you can called our lunch or dinner.I think my hubby visits Taco Bell almost everyday.For me I like certain type of taco but not as crazy as him.Taco wrapper sold everywhere and easy to get at anytime.We can also make our own taco at home with any of our leftover food or our favorite meat or seafood..Usually,I used leftover roast meat as the main ingredients to wrap taco.I also like to make taco for Mishu's school lunch.This snack or lunch is  so easy and simple to prepare....No brainer at all!! Not to said it's taste great !!

6 pieces plain tako wrap
1 cup shredded roasted chicken breast
1 head green lettuce,washed
1 cup shredded 3 cheeses
1 nos avocado,slice and cut small

1:Heat a medium size non stick pan at medium low heat.Place a piece of taco wrap on the pan.Heat both side until slightly brown on the skin.Repeat the same procedure for the second wrap on the pan..
2:Place a handful of shredded cheese on the taco wrap while it's still on the pan. Quickly spread some shredded chicken and avocado on top of shredded cheese too.Lastly place 2 pieces of green lettuce over the ingredients.
3:Place the 1st taco on the top of lettuce.Use a sharp knife and cut the tacos in 4 pieces.
4:Serve warm immediately..

Mini Wheels Pasta and Beans in Three Cheese Salad


I still have a half box of mini wheels pasta leftover from making Mishu's school craft.I wonder what to do with it.At last I decided to use it with beans and make some cold salad as side dish.This pasta salad is really simple and easy..It's also suitable pairing with any bbq meat or roast meat.

1/2 box mini wheels pasta,cooked al dente
1 cup green pea,frozen
1 can red bean,wash under cold water until clear (Goya brand)
1 can chick peas,discard liquid
1/2 cup mayo,plus extra if necessary
1/4 cup Romano grated cheese
1/4 cup Parmesan
5-6 tbsp crumbled feta cheese

1:Combine all the beans and run under cold water until the water clear.Prepare a large bowl,scoop in mayo,Parmesan and Romano,mix well.Add in cooked mini wheels pasta and beans in the bowl,use spatula and mix well..
2:Store the pasta in fridge for 30 minutes or longer to chills before serve cold.
3:Dish pasta out to an individual plate,spread some crumbled feta cheese on the top.Serve cold.

Rum Scented Marble Cake

I adapted this Rum Scented Marble Cake from Nick Malgieri "The Modern Baker" baking book.Marble cakes are both homey and festive.A marble cake looks slick when you slice into it and reveal delicate pattern created when the two batters are swirled together.This recipe is a keeper!!

Makes one 10 inches (25cm) tube or bundt cake,about 24 slices

Base Batter:(A)
2  2/3 cups all purpose flour,sifted
1  2/3 cups sugar
2 tsp baking powder
1/4 tsp salt
12 oz/350gm/3 sticks unsalted butter, softened
7 large eggs
3 tbsp dark rum

Chocolate Batter:(B)
2 tbsp dark rum
3 tbsp milk
1/2 tsp baking powder
6 oz  bittersweet ( not unsweetened)chocolate,melted and cooled *I used  Ghirardelli 60% Cacao Bittersweet Chocolate Chips*
2 cups Base Batter

1:Preheat oven to 325 F(160 C).Set a rack in the lower third of the oven.Prepare 1 tube or bundt pan,buttered coated with flour or dry bread crumbs.
2:Combine flour ,sugar,baking powder,and salt in a bowl,set aside.
*I changed this method *►Beat butter and sugar in mixer until creamy and light.Reduce speed before add in run and egg one by one.Beat the mixture until smooth ,heavy paste about 1-2 minutes.
3:Stop and scrape down the bowl and beater.Add in flour mixture at low speed,beat for 1 minutes.
4:Remove 2 cups of base batter into another large bowl for chocolate batter.Add in all ingredients B into the base batter,mix well with whisker or spatula.◄
5:Scrape half the remaining base batter into the prepared pan and smooth the top.Cover with the chocolate batter,making it as even a layer as possible.Top with the remaining base batter and smooth the top.
6:Use a thin metal knife and insert into the batter at the central tube,with the flat side  of blade facing you.Draw the blade through the batter to the bottom of the pan and up and out the side of the pan closest to you.Repeating the motion around the pan,making a spiral in the batter,almost as though you were folding  eggs white into it.Stop when you get back to the point where you started.(Do not smooth the top of the batter-it might disturb the marbling)
7:Bake the cake until it's well risen and firm and a toothpick or a small thin knife inserted midway between the side of the pan and the central tube emerges dry,about 1 hour.
8:Cool the cake in the pan for 5 minutes,then invert a rack over it.Invert and lift off the pan.Cool the cake completely on the rack.

Italian Sweet Sausage with Oregano

Previously, I bought a pack of Italian sweet sausage from BJ's wholesale.A pack of Italian sweet sausage sold in BJ's comes in big quantity which is about 5 pounds (12 casing) a pack.I have stored the other half in freezer for later use and divide this half  for two different types of cooking.I used 3 casing for making pizza and the rest of the sweet sausage with Oregano.I have abundant of Oregano in my garden and hardly use it for any of my cooking.I like the idea to infused oregano herb in this simple dish.  Honestly ,this dish is so easy to prepared and cooked,not to said it's taste delicious!! No brainier at all!! Enjoy cooking!!


3 casing Italian sweet sausage,pan-fried lightly before slice
1 small red bell pepper,slice
1 small green pepper,slice
1 medium onion,peeled and slice
3-4 sprig Oregano,use leaf only
2-3 cloves garlic, minced garlic
1 tbsp ground black pepper
salt to taste
2 tbsp butter for stir-fry
4-5 tbsp canola or vegetable oil for pan-fry

1:Heat pan or skillet at medium high heat.Add in oil and sweet sausage,pan-fry sausage until golden brown.Let it cool down before slice.
2:Add in butter and garlic in the skillet,fry until fragrant,then toss in,oregano, bell peppers and onion .Fry for another 3-5 minutes before toss in sausage,ground pepper and salt.Check the seasoning.
3:Dish out and serve warm.
