One of the sweet bun I like from Chinese bakery is red bean bun.I used Alex Goh "No Time Dough Method" to make this sweet dough.The preparing time of this method is shorter then his others method.Since I'm lazy to make my own red bean filling,I just used red bean in can.If you think making your own red bean filling is better,why not?
480 gm bread flour (high protein flour)
120 gm unbleached flour or all purpose flour
110 gm sugar
10 gm salt
20 gm milk powder
4 tsps instant active yeast
1 tsp bread improver (optional)
300 ml cold water
1/3 tsp vinegar
60 gm butter
2 cans of ready to use red bean(or you can cook the red bean)
1 egg+2 tbsp water
2 cups shredded cheddar cheese
1:Combine (A) ingredients together in a large bowl,blended well with hands or mixer.
2:Add in ingredients (B) into (A) and knead to form a dough.
3:Add in ingredients(C) into the dough and keep kneading to form a smooth and elastic dough.
4:Mould in into a round shape ,place in a mixer bowl.Wrap with a clear film and let it proof for 15 minutes or double size.
5:Divided the dough to 50 gm each.Roll each dough into ball shape.Flatten the dough on your palm.Place 1 tbsp or more red bean in the center before wrap up again in ball shape.
6:Place all the red bean dough on a prepared lined parchment paper baking sheet.Let it proof for 20 minutes or until double size.
7:Preheat oven to 375 F or 190 C.Brush egg wash on all the bun before top with shredded cheese.Bake for 12-15 minutes in the middle of oven.
8:Remove from oven and serve warm.
