Hot dog Bun(No Time Dough Method) By Alex Goh

I like sweet bun dough  or any sweet bun sold in Asian or Chinese bakery because very mouthful is feather-like and tastefulness remains inseparable in my taste buds.I adapted this recipe from Alex Goh "No Time Dough Method".This recipe is really straight forward and simple to follow.










Ingredients:
(A)
480 gm bread flour
120 gm plain flour
110 gm sugar
10 gm salt
20 gm milk powder
4 tsp instant yeast
1 tbsp bread improver

(B)
1 egg
300 ml cold water
1/3 tsp vinegar

(C)
60 gm butter


Filling:
8 sausage/hotdog
1 cup shredded cheddar cheese
1 egg + 2 tbsp water



Method:
For the dough:
1:Mix (A) ingredients in a mixer or large bowl,well blended.Add in (B) ingredients,mix and knead to form a dough.
2:Add in (C) ingredients into the dough,continue kneading to form  smooth and elastic dough.
3:Mould it into a round shape and wrap with clear film.Let it prove for 15 minutes or longer if the room temperature is not warm.(double size)
4:Divide the dough into 2 portion.Save the other portion for other filling.Wrap the save portion in film wrap tight and keep in fridge.for the other portion divide to 8 small portion ball.
5:Flatten the dough balls and roll them out into long strips.Then wrap the dough around the hotdog,place on a baking sheep over parchment paper..Keep repeat the same procedure for the rest of the dough.
6:Let it to prove for double size or 45 minutes.Preheat oven to 375 F.Brush with egg wash and place some shredded cheese on the top.
7:Bake for 15-20 minutes on oven middle shelf.Remove from oven and let it cool for 5 minutes.Serve warm.

Breaded Fried Chicken Cutlet with Pasta

Chicken cutlet is popular meat dish among children and adult.Cooking this dish is no brainier at all.You can use any of your desire seasoning for this chicken cutlet but I still prefer the simple and easy seasoning:salt, pepper and garlic powder..Enjoy!!







Ingredients:
1 whole boneless chicken breast,slice it horizontally from the thick end to the thin end into 1/4-inch-thick cutlets or into 2 pieces.Use tenderizer to pound the meat before seasoning.
1 tbsp ground pepper powder
1 tbsp sea salt
1 tbsp garlic powder

Coating:
1/2 cup all purpose flour +1/2 cup rice flour+1 tsp salt
1 egg + 3 tbsp milk
1/2 canola oil




Method:
1:Season the chicken cutlet with salt ,pepper and garlic powder for 30 minutes.Mix both flours with salt thoroughly in ziploc bag.
2:Heat fryer with oil or skillet with oil at medium high heat.Beat eggs in bowl with milk for dipping.Coat chicken cutlet with flour mixture before dip into eggs mixture and then to flour mixture again.
3:Slowly place the coated chicken into the hot oil 350 F.Fry the chicken for 15-20 minutes or until golden brown.Remove chicken cut from fryer onto a paper towel to absorb the excess oil.
4:Cut chicken cutlet int 6-8 pieces.Serve with avocado,tomato and pasta.

Spaghetti with Garlic and Olive Oil

Spaghetti is one of the most popular pasta among all the pasta out there.Children and adult alike loves this tiny and long shape pasta.I make this spaghetti accompany with Breaded Fried Chicken for our lunch.Will post Breaded Fried Boneless Chicken following this entry.






Ingredients:




1/2 pack spaghetti,cook accordingly to the instruction on the box
1 bulb fresh garlic,peeled and slice

1 small onion,peeled and slice
1 tbsp crush mixed Italian herbs
3-4 tbsp grated Parmesan cheese or more
1/4 cup olive oil
1 tsp ground black pepper
salt to taste



Method:
1:Cook spaghetti accordingly to the instruction on the box or packages. Sieve and set aside.Reserve 1/2 cup of the spaghetti water,on the side.
2:Heat skillet with olive oil and slice garlic,fry until golden brown.Toss in spaghetti,onion,Parmesan cheese ,ground black pepper and Italian herbs,mix well with spatula .Add in 1/2 cup pasta water,cook for another 3-5 minutes.
3:Check the seasoning.Remove from heat,dish out and serve warm with main dish.

Baked Wild Salmon with Almond Nut

Wild salmon sold in Walmart is pretty cheap compare with other store or supermarket.The only place I bought my Wild salmon is Walmart.I won't use wild salmon for sushi because of the appearance: dull color .I prefer to use farm raise salmon for sushi because they have attractive powerful orange color. Since I have some leftover ground almond sitting around,I might as well used it to coat on the salmon.This new almond salmon recipe are not only interesting but delicious!! 





Ingredients:
2 pieces wild salmon,about 200 gm each piece,thawed (previously frozen)
1 tbsp sea salt
1 tsp ground pepper

Coating:
1/2 cup ground roasted almond with 3 tbsp flour and 1 tbsp sugar powder
1/2 cup all purpose flour
1 egg + 3 tbsp milk or water




Method:
1: Season salmon with salt and ground pepper,set aside.Ground almond (use pulse on blender)with flour and sugar powder if you don't gave ready ground almond.
2:Preheat oven to 400F.Prepare baking sheet over aluminum foil,spray with butter or vegetable oil on the foil to prevent sticking.
3:Coat seasoned salmon with flour,then dip into the egg mixture before coat with almond mixture.Placed coated salmon on the greased baking sheet.
4:Spray some oil on the coated salmon before bake for 30 minutes.Remove from oven serve warm with tartar sauce .
