Best Chocolate Chip Cookies






Mishu was sick for couple of days.So to make her feel better I promise to bake some chocolate chips cookies as a treat for her.I adapted the recipe from this site Best Chocolate Chip Cookie.Mishu and hubby was happy with the result.They said the cookies is so good!!








Ingredients:

1/2 cup shortening
1/2 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 tsp baking soda
1/4 tsp salt
2 eggs,room temperature
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 cup semisweet chocolate chips or more






Method:

1:Preheat oven to 375.Prepare 2 baking sheets with parchment paper. Sieve the dry ingredients,set aside.

2: In a mixer bowl beat shortening and/or butter on medium to high speed for 30 seconds. Add brown sugar, granulated sugar and salt; beat until combined. Beat in egg or eggs and vanilla until combined. Fold in the flour and baking soda  with spatula or beat 3-4 rounds in a mixer until all the dough in-cooperate.Do not over beat.  Stir in the chocolate chip,mix well.

3: Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake cookies in preheat oven for 8-10 minutes or until edges are lightly browned. Remove cookies and cool on wire rack.

Roast Pork Puff Pastry

I have some leftover roast pork filling from making steamed-roasted-pork-bun-cha-xiao-bao bun.This time I used store bought puff pastry skin as the wrapper instead of making the bao dough again.There is not much work involved since the filling was ready make previously.All I have to do is cut the pastry into 2 pieces ,peel the layers open before wrap with the roast pork filling,then bake in the oven for 30 minutes.Tah...dah!! Roast pork puff ready to eat!!







Filling:
**you can use 1/2 or 1/3 of this filling portion**


3 cups diced roasted-pork-butt-char
4 medium onion,peeled and diced
1 1/2 cup green peas (thawed)

Sauce:
2 tbsp oyster sauce
2 tbsp dark soy sauce
3 tbsp soy sauce
1/2 cup sugar
salt and ground white pepper to taste
4 tbsp corn flour + 1 tbsp gelatin + 1/2 cup cold water dissolved
2 tbsp oil
1 yolk +2 tbsp water for brushing
*adding gelatin into the sauce mixture will not only have the soft velvet thickness but delicious too .It's also easy for wrapping*

1 pack puff pastry,2 sheets cut into 2 pieces a sheet and peel the layers

Method:
1:Preheat oven to 385 F.Prepared roast pork filling in a day or few hours advance.Line parchment paper on a baking sheet or tray.
2:Sprinkle some flour on the kitchen counter to prevent the wrapper from sticking or easy to roll..Cut and open pastry puff wrapper to your ideal size.Use dough roller to roll the pastry puff out evenly**Do not over thawed the puff pastry wrapper,it's tends to get too soft out of shape and difficult to wrap**.Place puff wrapper on your palm or kitchen counter,scoop 1-2 tsp roast pork filling on the center.Seal the edges with water,then crimps with fork.
3:Brush with egg washer before place on the baking sheet.Bake in preheat oven for 25-30 minutes.Remove from oven and serve warm.

Pink Grapefruit and Mango Salad


 
These days our weather is beautiful and nice consider we're still in Spring season.Fresh fruits and vegetables are abundant and sold everywhere at reasonable price.These days Mishu and hubby both like fruits for their diet especially grapefruit,oranges,watermelon,banana,strawberry and many more..But sometime these fruit only look pretty and good on the outside but it's sweet less or tasteless in the inside..So what should I do with it now? I decided to make fruit salad for my lunch..Actually,this kind of fruit salad is pretty delicious and healthy to eat daily for lunch..Just toss some lemon juice,salt and apple vinegar into the cut fruits,chill and serve with lunch.







Ingredients:
1 large Haitian mango,peeled and sliced
1 nos large pink grapefruit,peeled and cut
1 red pepper,sliced thin*optional*
1 stalk cilantro,washed and cut

I large lemon,cut and squeesh
fine salt to taste
apple vinegar to taste




Method:

1:Toss all the cut mango and grapefruit in a large salad bowl.Combine sliced red pepper,cilantro,salt ,lemon juice and vinegar,mix well.
2:Chill ,serve as salad or appetizer.

Fried Hooters Chicken Wing


Last weekend, when I was shopping in Walmart ,I was surprised when I saw Hooters wing breading on the shelf.I guess after all these years Hooters decided to promote their product through supermarket or grocery store to increase their sale .Honestly ,I never try any of the Hooters food even though there is a Hooters restaurant a block from where I live.I wonder why mans like to hang out in Hooters?? (hubby said man didn't go for their food,they go to look at pretty servers/girls in short.lol!!) I decided to try out this product since hubby requested me to buy fried chicken from take-out store few days ago.Beside Hooter's breading ,I also bought a pack of four pounds of frozen section wing at Walmart.When I read the instruction at the back of the packaging,I realized their method is very simple.No seasoning or marination,just coated with the breading..Hmmmm...I doubt if I follow their method,will the fried chicken wing taste good or tasteless? On the save side ,I better season or marinate the chicken wing before coating with the breading,right? The breading is not bad,acceptable..But back to my suggestion ,Hooter's need to add seasoning method  before use the breading for frying.If we just use the breading itself,the fried chicken wing meat doesn't have any taste at all..That means the breading is nothing special.Of course, this is my personal opinion only...enjoy!!





Ingredients:
4 pounds section chicken wing,thawed
3 tbsp garlic powder
3 tbsp sugar
2 tbsp seasalt
1 tbsp ground white pepper powder
*****************************************************

1 pack Hooters breading
2 cups oil for frying

Blue cheese dressing
Buffalo chicken sauce


Method:

1:Prepare a large container with lid.Combine section wing,seasalt,sugar,ground pepper and garlic powder in the container,mix well.Marinate overnight.
2:Heat oil in fryer or deep fry pot at high heat.Pour 1/2 pack of the breading onto a medium tray or plate.Coat chicken wing with the breading,shake the excess flour before place into the hot oil at 350 F.
3:Fry chicken wing until golden brown,about 10-15 minutes before remove from fryer.Place fried wing on a paper towel to absorb the excess oil.
4:Serve fried chicken wing warm with blue cheese dressing and buffalo sauce .
