New York Style Thin Pizza Dough (Spicy Chicken and Sausage Topping )

Mishu been harping me to make homemade pizza.Last Friday she said "mommy it's been a long time I didn't eat your pizza"!! OK..so pizza I made but I realize the active yeast I have in fridge was expired.The downside is when I bought the vacuum double package yeast from BJ's wholesale,the yeast comes in large quantity.The upside is the yeast sold in BJ's is awesomely cheap  compare with individual packaging that sold in any supermarket.We like New York style thin crust pizza than the thick crust..So I "google" to look for thin crust and found a 5 stars dough recipe at americanfood.Eliot said it's the best pizza I made..I have some leftover frankfurter,so used it in one of the pie.We also love spicy chicken,so I throw some spicy sauce with boneless chicken in another pie..What a delicious pizza dinner for us!!








Ingredients for Dough:

2 1/4 teaspoon (1 package) instant dry active yeast
1 cup warm water (not hot!)
1/2 tablespoon sugar
3 cups bread flour(high protein flour), or as needed
2 tablespoon olive oil or regular cooking oil
1 1/2 teaspoon salt


Topping:*optional*
1 lb boneless chicken ,cut cubes
4 medium onion,peeled and sliced
6 frankfurter or sausage,cut or sliced
2 cups shredded yellow cheese or more
2 cups shredded mozzarella cheese or more
1 bottle spicy sauce
1 bottle pasta sauce or more

Method:

1:Add the water, yeast, sugar, and a 1/2 cup of the flour into a mixing bowl. Stir well and let sit for 20 minutes. It will get bubbly.

2:Add olive oil, salt, and 2 cups of the flour, and mix with a wooden spoon until it's together enough to turn out on to a lightly floured work surface to knead.

3:Knead for about 10 minutes, while adding more flour a little at a time, to produce a soft, elastic and slightly sticky dough. Do not add too much flour, just enough to keep it from sticking to the work surface as you knead.

4:Form the dough into a ball and place in a large oiled bowl. Drizzle a few drops of oil and coat the top of dough to prevent the surface from becoming dry.

5:Cover with a kitchen towel and place in a warm spot for 2 hours, or until the dough doubles in size.

6:Punch down the dough and knead for few minutes.Divide the dough into 3 balls,spread the dough in pie shape and place on the pan or oven brick pan.Let it rest for 15-20 minutes.Preheat oven to 480 F.Meantime, heat skillet with spicy sauce and boneless chicken.Add in 1 tbsp sugar,cook for 3 minutes.

7:Top your favorite topping on the dough pies.Bake in preheat for 20-30 minutes.Remove from oven.Slice and serve.

Raspberry and Banana Cream


I tried to encourage Mishu to eat fruit daily.Most of the time,our over ripe banana usually goes to the trash end of the week..One of the suggestion daddy made was to be creative and fun when serving Mishu fruit.So he come out with this idea:Banana with whipped cream..Mishu love this dessert dearly especially the whipped cream part!! So if you like to encourage your children to eat fruit,I think this banana platter is ideal for them!!





Ingredients:


2 yellow banana,peeled and sliced
1 cup raspberry,washed
1 bottle light sweetened whipped cream


Method:

1:Sliced banana about 1/2 inch each.Top with light cream before add the raspberry on the top.Serve chill..or room temperature.
This fruit platter is ideal as snack or dessert to serve at any occasion.

Pan-Fried Wild Salmon Over Mix Salad

Yesterday I make a healthy quick simple lunch for hubby..He said he love the crispy crust part of the salmon.I seldom buy any wild salmon because I don't like the pale color of wild salmon compare with farm raised salmon which have bright orange color.Beside the color,wild salmon is mostly sell in frozen form or previously form before it's was thawed.Yes,I know wild salmon is much better in nutritional perspective than farm raised salmon.






Ingredients:


2 pieces ready cut salmon,about 300 gm,thawed
2 tsp seasalt
2 tsp ground black pepper
3 tbsp corn starch
3-4 tbsp oil

handful of ready to eat mix salad







Method:

1:Heat aluminum skillet with oil at medium heat.Rub seasalt and ground pepper all over the salmon before coated with corn flour.

2:Place the coated salmon onto the skillet ,fry both side until light brown about 2-3 minutes each side.

3:Prepare a bed of salad on a plate.Remove fried salmon to a paper towel to drain the excess oil before place over the salad.

4:Serve as appetizer or as salad.Use tartar sauce for the salmon or any of your favorite salad dressing.
