Broccoli Rabe was on sale a week before Hurricane Sandy. I bought 2 bunch of these fresh ,crisp and green broccoli. The price is relatively cheap during these season.The best way to cook these broccoli rabe is sauteed with garlic and anchovies!!
1 bunch of rabe broccoli about 1 1/2 lb,remove the end stump about 2 inch and trimmed
3-4 cloves garlic,peeled and slice
50 gm fried anchovies
salt to taste
1 tbsp chicken boullion powder
2 tbsp corn oil
1:Prepare water in a medium stock pot at high heat.Bring water to boil add a drop of oil and all the trimmed rabe broccoli in the bubbly boil water.Cook the rabe broccoli for 10-15 minutes or until soft.Removed rabe broccoli into a seive,set aside.
2:Heat large skillet or pan with corn oil at medium high heat.Add in corn oil and sliced garlic in the skillet,fry until golden brown.Toss in rabe broccoli ,salt and chicken bouillon power,mix well.Check the seasoning..
3:Lastly toss in fried anchovies and stir for few second before dish out and serve warm.
