I still have a half box of mini wheels pasta leftover from making Mishu's school craft.I wonder what to do with it.At last I decided to use it with beans and make some cold salad as side dish.This pasta salad is really simple and easy..It's also suitable pairing with any bbq meat or roast meat.
Ingredients:
1/2 box mini wheels pasta,cooked al dente
1 cup green pea,frozen
1 can red bean,wash under cold water until clear (Goya brand)
1 can chick peas,discard liquid
1/2 cup mayo,plus extra if necessary
1/4 cup Romano grated cheese
1/4 cup Parmesan
5-6 tbsp crumbled feta cheese
Method:
1:Combine all the beans and run under cold water until the water clear.Prepare a large bowl,scoop in mayo,Parmesan and Romano,mix well.Add in cooked mini wheels pasta and beans in the bowl,use spatula and mix well..
2:Store the pasta in fridge for 30 minutes or longer to chills before serve cold.
3:Dish pasta out to an individual plate,spread some crumbled feta cheese on the top.Serve cold.

Pardon my ignorance, but this is honestly the first time I've ever seen pasta noodles like that. They have ignited my curiosity though so I'm checking out some cookbooks for sale later and see what else I can do with them.
