Broiled Chicken with Red Potato and Carrot

These day I will make healthy food for hubby.He is on straight diet.I was surprised when I see him at the airport from far away.He came to pick us up when we was back from near 3 months Malaysia trip.At first I thought I saw someone else but when I walked to him ,I dropped my glasses!! He look like he lost a lot of weight..That right!! He told me he lost more than 50 pounds by eating the right portion and right kind of food.Yesterday,I broiled some boneless chicken breast with some baby carrot,onion and red potato with garlic powder and Montreal chicken seasoning..You can find Montreal chicken rub at BJ's wholesale or any supermarket.The idea to broiled chicken in aluminum foil is not only easy and simple but also to save your precious time from cleaning.You don't have to soak and scrap the baking dishes.This dish is not only healthy but delicious too!!


1 pieces heavy aluminum foil 16x16
2 boneless chicken breast,sliced each piece into half
10 red potatoes,washed and cut halves or quarter
2 big onion,peeled and cut into 4 or 6 each
1 cup baby carrot
3-4 tbsp low fat butter(I used smart butter)
3-4 tbsp Montreal seasoning
1 tbsp ground black pepper


1:Season chicken with Montreal chicken rub for 30 minutes or longer.Preheat oven to 375 F.
2:Prepare a heavy aluminum foil,place seasoned chicken in the center,follow by cut red potatoes,baby carrot and onion.Sprinkle some ground black pepper and butter on the potatoes ,onion and baby carrot.Wrap or foil all the corner up.
3:Place wrapped foil onto a baking dish underlined with some water.Place the baking dish on the oven and broil for 45 minutes.
4:Remove chicken from oven and serve warm as main dish.

Banana Cake by Alex Goh

I'm back now!! Yes It's been a while since I update my blog here..Thousand apologize to all my beloved reader who always comes here and check for new posting..As some of you know I was in Malaysia for 2 1/2 month this summer..While vacation in Malaysia I don't have a chance to bake or cook..All I do was eat,eat and eat!!! Of course, beside eat and drink I also do some shopping:clothes,shoes,baking pan ,baking ingredients,baking book and many many more!! One of the baking book I managed to get is "Creative making of Cakes by Alex Goh".Today I would like to present you my not so pretty baking of banana cake!! haha!! Actually I was in the middle of cleaning ,cooking and baking at the same time.As you when you rush to do many things at the same time,I guess something must goes wrong .I think the result doesn't comes out as nice as the book..By the way,since I baked this banana cake here you goes...

250 gm butter,softened
230 gm sugar

5 eggs(room temperature)

300 gm all purpose flour(sifted)
1/2 tbsp milk powder
1 tsp baking powder

200 gm ripe banana
a pinch of salt
1/2 tsp banana essence *optional*


1:Prepare greased loaf tin or 8 inch round pan with lined parchment. Preheat oven at 350F or 180 C.
2:Use a mixer to whisk or cream (A) at high speed till light and fluffy..Then reduced speed before add in (B) one at a time and beat till light and smooth.
3:Fold in the sifted (C) and mix well.
4:Mash bananas and mix well with the rest of (D) ingredients till smooth.Then add into the flour mixture and mix till well incorporated.
5:Pour the batter into greased and lined pan .Bake for 50-60 minutes.Use a tooth pick or bamboo stick to test the cake .Remove cake from the pan onto a wired rack to cool completely before cut and serve.
