Three Cheese Neo-Neopolitan Pizza by Peter Reinharts

It's been a months since I bake any bread or pizza..Few months ago I bought a Artisan Breads book by Peter Reinhart's but so far I only used his recipe once..Today I decided to bake pizza for dinner...One of the recipe I selected was Neo-Neopolitan Pizza Dough.....but I alter the method slightly to suit me..Instead of using mixer to mix the dough,I used bread machine to knead the dough..As for the topping I used three type of cheese:Parmesan ,mozzarella and cheddar cheese.Overall this pizza recipe is good!!








Ingredients for Dough:

5 1/3 cups (680g) unbleached bread flour
2 tsp(14 g) salt
1 tsp (3g) instant yeast
2 tbsp (28.5g) sugar,or 1 1/2 tbsp honey
2 cups plus 2 tbsp (482g) water,at room temperature
2 tbsp (28.5g) olive oil


Topping:
1 bottle pasta sauce
2 cups shredded yellow/cheddar cheese
1 cup fresh cut mozzarella cheese
1 cup grated Parmesan cheese

Method:
1:Combine all of the ingredients in a mixing bowl.If using a mixer,use the paddle attachment and mix on the lowest speed for 1 minute.If mixing by hand,use a large spoon and stir for about 1 minute,until well blended.I used "dough cycle" in BM.Let the dough rest for 5 minutes to fully hydrate the flour.
2:Switch to the dough hook and mix on medium-low speed,or continue mixing by hand,for 2-3 minutes,until the dough is smoother but still soft,supple and somewhere between tacky and sticky.
3:Spread 1 tsp of olive oil on a work surface,then use a bowl scraper to transfer the dough to the oiled surface.Rub your hands with the oil on the work surface,then stretch and fold the dough one time,reaching under the front end of the dough,stretching it out,then folding it back onto the top of the dough.Do this from the back end and then from each side,weighing about 8 oz (227g).Form each piece into a ball,then place each into a separate sandwich-size freezer bag misted with spray oil.**For me I just divided the dough into 1/2 portion,keep the other 1/2 in freezer and used the other 1/2 for 2 portion..**

4:Place the desired number of dough balls on a lightly oil surface.With oiled hands,stretch and round each piece into a tight ball,then place them on a pan that's been lightly oiled(preferably with olive oil).Loosely cover with plastic wrap and let rest at room temperature until ready to bake
5:About 1 hour before baking the pizzas,preheat the oven and a baking stone as high as the oven will go ***I set oven to 450 F*** if you don't have a pizza stone,you can assemble the pizzas on a baking sheets covered with parchment paper and bake them on the pans.While the oven is preheating,prepare your cheeses,sauce and topping
6:When ready to assemble and bake,put about 1 cup(128g) flour in a bowl.Use some of it to dust the work surface,your hands and the peel,if you have one.Put one of the pizza dough balls in the flour to coat the bottom.Transfer to the work surface and gently tap it down with your fingers to form a disk.Slide the backs of your hands under the dough,then lift it and begin to rotate it,using your thumbs to coax the edges of the dough into a large circle
7:Don't stretch the dough with the backs of your hands or your knuckles,let your thumbs do all of the works;your hands and knuckles merely provide a platform to support the dough.If the dough started to resist and shrink back,set it on the floured work surface and let it rest for a minute or two.
8:You can move on to another dough ball,repeating the same gentle stretching.Continue working the dough and resting it as need be until it is about 10 to 12 inches diameter.It's should be thicker at the edges than in the center and the center should be thin but not paper thin.If the dough rips,you can try to patch it,or you can form it back into ball,move on to another dough ball and try again on 15 to 20 minutes.
9:When the crust is ready to be topped,place it on the floured peel.use flour rather than cornmeal or semolina,as it doesn't burn as quickly in the oven.Top the pizza as desired,then slide it onto the baking stone.If you aren't using baking stone,just put the panned pizza in the oven. 10:Bake for about 4 minutes,then use the peel or spatula to rotate the pizza.It's will take anywhere from 5 to 7 minutes for the pizza to fully bake,depending on the oven(convection ovens bake faster)The edge should puff up and be a deep golden brown,perhaps even slightly charred.
Remove the pizza,garnish as desired,then let it cool for 1 minute before slicing or serving..

Coconut Flavor Jello:Valentine Day


I took this batch of photos while back but totally forget about it,another backlog entry..Actually ,it's from Valentine Day as you can see the shape and theme are all ♥♥♥!! I bought few jello moulds while shopping at Queens..So I took the opportunity to tried out the new moulds and was happy with the result..easy to release and the texture of the jello is quite good,plus the fragrant is not bad at all.I used a per-pack flavor coconut gelatin for the top layer and non-flavor gelatin for the bottom layer...By the way,I won't post any recipe for this entry..The fact to the matter is I forget what is the measurement since these photos has been sitting in my hard drive for more than a month..So I won't just whack the ingredients just for the sake of posting.. Just enjoy the photos..

Baked Split Chicken Breast and Baked Macaroni Cheese

For the last couple of weeks ,I been cooking simple and easy dinner for the family..Most of the time I used oven to bake or roast meat.One of the dishes I cooked is Baked Split Chicken Breast and Baked Macaroni. Recently when I shop at BJ's wholesale,I found the split chicken breast is on sale for $0.99 a pound.For that kind of price, of course I won't miss my chance not to get it!! I bought a family pack which is about 10 pieces.So far I just used 4 pieces and store the remaining in freezer for later use.It's not brainier to make this dishes..All I need is some special spices to season the chicken breast and baked!! As for macaroni I used Kraft macaroni in box..before I bake the macaroni ,of course I have to cook the macaroni first...Since my family are cheese lover, I added some American shredded cheese and Parmesan cheese into the macaroni cheese before bake!! Viola!! what a priceless meal!! sound easy and simple,right??








Ingredients:

4 split chicken breast,washed
2 tbsp sugar
2 tbsp salt
4 tbsp mystique rub
BBQ sauce
1 head iceberg lettuce,peeled and washed
________________________

Macaroni:

I pack Kraft macaroni
1 cup shredded yellow cheese
1/4 cup Parmesan grated cheese
2 cups water
1/2 cup half and half

Method:

1:Rub salt,sugar and mystique rub all over 4 split chicken breast for 1 hour or more.Preheat oven to 375 F.Line aluminum foil over baking tray before placed seasoning chicken on it..



2:Meantime,prepare stock pot with water at high heat.bring water to boil,add in macaroni and milk.cook for 5 minutes before add in shredded cheese and pamaseran cheese..Remove from heat and pour into 4 individual baking bowl.



3:Bake chicken in oven for 35-45 minutes.Also bake macaroni in oven for 10-15 minutes..Remove chicken from oven,brush with BBQ sauce.Then roast the chicken in broiling setting for another 3-5 minutes.



4:Serve warm whole chicken breast over bed of lettuce and baked macaroni .

Moist Banana Cake II

Every week when I shop at BJ's wholesale, I will get a bunch of yellow banana for my fruit basket.Usually we can't finish the whole bunch and at the end of the week,the leftover of yellow will turn to brown with dots and then black .Most of the time I just trash the black banana away when I don't have mood or idea how to use the over riped banana..But this morning when I looking at the over riped banana suddenly I get an idea what to do.. I want bake a very Moist banana cake from the over riped banana..The result of this cake is really good.I used cake flour instead of all purpose flour.I guess I like cake flour maybe because it's has softer and finer texture for a cake.








Ingredients:
4 over riped banana,mashed
3 cups cake flour,sifted
1/2 tsp salt ,sifted
2 tsp vanilla extract
2 tsp banana extract
2 tsp baking soda ,sifted
3 large eggs
100 ml milk
3/4 cup butter,softened
2 cups granulated sugar *reduce sugar if you want less sweet*




Method:
1:Preheat oven to 325F. Prepare a cake mould or cake bundt.Combine cake flour,salt and baking soda sieved,set aside.

2:Beat butter and sugar in mixer at high speed until light and fluffy.Reduce speed,add in egg one by one,mix well..Add in vanilla extract ,banana extract and milk.Beat for another 30 second before add in banana,mix well.

3:Add in flour mixture,fold in the flour with the other batter ,mix well.Pour the batter into the bundt mould or your desire cake mould.

4:Bake for 45 minutes or until the toothpick inserted comes out clean.Remove cake from oven,cool cake in mould for 15 or longer before remove from mould completely.Cut and serve with tea or coffee.

Fried Coconut Shrimp with Mayonnaise

One of my favourite seafood is shrimp....Shrimp is easy to cook and abundant..But to find a tasty shrimp recipe is not hard at all.For me I like any type of shrimp cooking as long as the shrimp is meaty,fresh,elastic and bouncy..In a short simple word,the shrimp should not taste like iodine or tasteless.I created this dish when I found I still have some roasted sweetness coconut flake sitting around in my pantry..If you're shrimp lover like me,why not try out this shrimp coconut flakes?








Ingredients:

1/2 pound large shrimp,de-shelled and deveined
1 tsp salt
1 tsp ground pepper
1/4 cup all purpose flour
1/4 cup rice flour
1 egg
4 tbsp water

1 cup oil for frying
mayonnaise
1 cup roasted sweetened coconut flake




Method:

1:Heat oil in skillet or fryer at 350 F.Combine cleaned shrimp,salt and ground pepper in a medium bowl.Beat egg until frothy,then add in with water,all purpose flour and rice flour ,mix until well combine.
2:Coat seasoning shrimp into the flour mixture,dredge the tail into hot oil.Fry until golden brown.Remove cooed shrimp from fryer onto a paper towel to absorb excess oil.
3:Place cooked shrimp on a plate before drizzle with mayonnaise and sprinkle with roasted coconut.Serve warm as appetizer or snack.
