Blueberries Yogurt Muffin

Last week was Mishu birthday and she celebrated her birthday with her classmate at school.Nowadays her school have a very strict policy regarding food that allowed in the school by the parents..Her teacher said the only food that are allowed is muffin,fruit,vegetables and pudding or jello..It's sad there is no cake or cupcake are allowed for us to celebrate her Birthday at school but what can we do..Muffin is better then nothing at all,right? I adapted this blueberries muffin recipe here!! but the batter is quite thick so I added milk and extra butter into this recipe.I have to double the ingredients to make enough muffins for the class..Since I have mixer, I used mixer to mix all the ingredients then folding the batter by hands...to make my life easier ◘:) The blueberries muffin is soft and moist♥..








Ingredients:

2 cups all-purpose flour
1 cup white sugar
1 tsp baking soda
1 tsp baking powder
100 ml milk
1 (6 oz) container blueberry and strawberry flavored yogurt
1 egg
1 tsp vanilla extract
5 tbsp butter, melted
1 punnet blueberries,4 oz




Method:

1.Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.

2.Stir together flour, baking soda and baking powder,set aside. Beat sugar and butter in a mixer until light and fluffy,then add in egg, yogurt,milk and vanilla. Stir in flour mixtures together until combined,then fold in blueberries. Scoop into prepared muffin cups.

3.Bake in preheated oven for 25 minutes or until lightly golden brown.

there is some leftover muffin from school ,so later in the day I top the muffin with some cream cheese frosting and sprinkle before let her blow her candle on it..
Mishu loves Minnie Mouse character,so her Birthday theme was Minnie and Mickey Mouse..

Chayote with Chicken

The very first time I ever tried chayote was during summer this year.I love this vegetable immediately ..Well,maybe you can called it's fruit..It's shape likes a green pear and it has a thin green skin fused with the white flesh, and a single large flattened pit.The flesh has a fairly bland taste, and a texture described as a cross between a potato and a cucumber.I believed some people called it's as English cucumber..Chayote can be eat raw as salad or cook .It's have crisp flavor and is a good source of amino acids and vitamin C. This fruit or vegetable is available all year long..For me, the simplest way to cook this vegetable is to stir-fry with some salt,garlic and pepper powder!! Viola!!it's taste really good and healthy!!










Ingredients:
1 chayote,washed and sliced or julienne
1 medium onion,peeled and sliced
1 piece chicken breast,about 200 gm,sliced
1/2 carrot,peeled and julienne
2 tbsp garlic ,minced
1 tbsp chicken bouillon powder
salt to taste
1 tsp pepper powder
1 tbsp oil





Method:
1:Heat large pan with oil at medium heat.Add in garlic,stir for 30 seconds before add in chicken.Toss the chicken for 2 minutes before add in chayote,carrot ,onion ,chicken bouillon ,pepper powder and salt.
2:Toss all the ingredients well for another 3-5 minutes .Check the seasoning before dish out.(Do not over cooked chayote then it's become too soft not crisp)Serve warm immediately..

Banana Waffle with Maple Syrup

I had some overripe banana sitting on my banana hanger for a week..wondering what to do with it...Suddenly I have an idea!! how about Banana Waffle??? It's been awhile I make any waffle..As predictable I only use the waffle machine once in the blue moon.So I take this opportunity to make some waffle and store for breakfast the next day..All I need is to toast this banana waffle in the toast for 3-5 minutes before serve!! I noticed Banana waffle texture is slightly softer then regular waffle...I guess banana have mushy texture in the first place so it's won't change so much whether I infuse banana in bread or cake,right? The bottom line is banana waffle is something I would recommend if you want to use fruit for your waffle..










Ingredients:
2 cups all purpose flour
1 tbsp baking powder
1/4 cup sugar
2 cups milk
2 eggs
1/2 tsp salt
6 tbsp butter,softened
3-4 overripe banana,chopped
2 drops banana essence*optional*



Topping:
blackberries
whipped cream
maple syrup
butter

Method:
1:Combine flour ,salt and baking powder in a medium bowl,sifted.Beat butter and sugar in mixer at medium high speed until light and fluffy,add in eggs.Whisk until well combined.
2:Add in milk and banana.Slowly add in flour mixer,mix until well combine.Make sure no lump in the batter.Add in banana essence before stop the mixer.
3:Heat the waffle maker accordingly to the manufacture instruction.Use a clean paper or cloth to wipe down the machine before use.Dish 2 scoops of banana batter into the waffle maker when the machine is hot enough..When the green light go off or when the waffle turn to lightly golden brown color,remove waffle from maker..It's takes about 5 minutes to cooked and ready..
4:Top waffle with whipped cream, fruit ,butter and maple syrup,serve warm .

Fried Fish (Blue Fish)

Do you like fish? I loves fried fish or any type of fish dearly..I miss having fresh sea water and fresh water fish.If you are fish lover I guarantee you,you will love fresh fish just fish out from the water and to your dinner table.You can feel and taste the different between fresh and frozen fish..Years ago I used to fish at the lake in New York Upstate reservoir and beaches at Long Island .Too bad since having my daughter I stop fishing.Maybe when my Mishu is older we might go back to fish again..Well,I bought a big chuck of mackerel at the fish market in the city,thought I can use it to make curry fish but realise it's not mackerel,it's blue fish!! How you prepare blue fish? For me, I coated the fish with some salt and rice flour before pan-fried until crisp and golden brown.This fried fish is suitable pairing with tartar sauce or mayo and lemon!!









Ingredients:

2 sliced bluefish
2 tbsp rice flour or all purpose flour
1 tsp sea salt
1/4 cup oil
1 lemon
tartar sauce
___________________________________________________

Method:

1:Heat aluminum skillet or pan with oil at medium heat.Coat fish with salt and flour.When temperature is about 375 F,slowly place the fish on the skillet.
2:Fry fish both side for 5-10 minutes or until golden brown.Remove fried fish from skillet to paper towel to absorb excess oil.
3:Serve fish with warm tartar sauce and lemon.

Note:
Rice flour is more suitable to use for frying bcos it's stay crunchy and crispy longer than all purpose flour

Stewed Roast Bottom with Potato and Carrot

Another stewed beef recipe which is really simply and easy!!..All I need is a pack of McCormick stewed beef mix seasoning,roast bottom ,potato,carrot ,some garlic and some water!! *This is not a Advertorial post* You can get any McCormick seasoning in any grocery store or supermarket to make live easier....Less then an hour stewed beef is ready for dinner!! Sound simple and easy,right? not to said the meat is tender and delicious accordingly to Eliot and Mishu!!









Ingredients:
5 lb beef (roast bottom part or top bottom part) remove fats and cut cubes
3 carrot,peeled and cut 2 inch each
8 Idaho potato,peeled and cut quarter
2 tbsp minced garlic
2 tbsp vege oil
2 cup water
salt to taste






Method:


1:Prepare a large stock pot(5 qtr) at medium heat.Add in oil and garlic,stir for 30 seconds before add in cubes beef ,seasoning mixture and water,mix well.
2:Cover the stock pot with lid,simmer the beef for 30 minutes .If the liquid depleted,add more water if necessary.Add in carrot and potato,cook for another 15-20 minutes or until the potato and carrot is cooked.
3:Check the seasoning before remove from heat.Serve warm with rice or bread..

Cream Cheese in Fillo(Phyllo) Shells

When we had party or celebration we always look for something easy and simple,yet elegant to serve as appetizer or desert ,right? Why not try this ready baked fillo or phyllo shells? Either fill with savory filling or sweet filling as desert,this appetizer is really fantastic and delicious!! I used the ready baked fillo shells and fill with cream cheese filling .Actually I prefer to top with fresh fruits likes berries but since all my berries had gone from baking chiffon cake and smoothie,I used sprinkles instead.Hubby keep giving compliments that this desert is superb delicious!!











Ingredients:
I box ready baked fillo,15 pieces or use any fillo dough in tart mould
8 oz or 1 box cream cheese,room temperature
1/2 cup sugar
150 ml whipping cream or heavy cream
colorful sprinkle or fresh berries for topping
Method:

1:Use toaster or oven to re-heat the baked fillo shells again*optional*.Cool completely,set aside.If you use fillo sheets,use mini tart mould to bake the shell for 10 minutes or until golden brown.
2:Combine cream cheese and sugar in mixer.Whip the ingredients at medium speed for about 8-10 minutes or until light and fluffy.Then add in whipping cream,whip again until well combined.
3:Remove cream cheese mixture from mixer to pipping bag.Use M1 tip or your desire # tip to pipe the cream cheese mixture onto the fillo shells.Top with fresh fruit or sprinkle.Serve as appetizer or desert.
