Banana Waffle with Maple Syrup

I had some overripe banana sitting on my banana hanger for a week..wondering what to do with it...Suddenly I have an idea!! how about Banana Waffle??? It's been awhile I make any waffle..As predictable I only use the waffle machine once in the blue moon.So I take this opportunity to make some waffle and store for breakfast the next day..All I need is to toast this banana waffle in the toast for 3-5 minutes before serve!! I noticed Banana waffle texture is slightly softer then regular waffle...I guess banana have mushy texture in the first place so it's won't change so much whether I infuse banana in bread or cake,right? The bottom line is banana waffle is something I would recommend if you want to use fruit for your waffle..

2 cups all purpose flour
1 tbsp baking powder
1/4 cup sugar
2 cups milk
2 eggs
1/2 tsp salt
6 tbsp butter,softened
3-4 overripe banana,chopped
2 drops banana essence*optional*

whipped cream
maple syrup

1:Combine flour ,salt and baking powder in a medium bowl,sifted.Beat butter and sugar in mixer at medium high speed until light and fluffy,add in eggs.Whisk until well combined.
2:Add in milk and banana.Slowly add in flour mixer,mix until well combine.Make sure no lump in the batter.Add in banana essence before stop the mixer.
3:Heat the waffle maker accordingly to the manufacture instruction.Use a clean paper or cloth to wipe down the machine before use.Dish 2 scoops of banana batter into the waffle maker when the machine is hot enough..When the green light go off or when the waffle turn to lightly golden brown color,remove waffle from maker..It's takes about 5 minutes to cooked and ready..
4:Top waffle with whipped cream, fruit ,butter and maple syrup,serve warm .

Diana gave me a waffle maker two years ago for christmas and I only used it once. She is coming home this weekend, maybe is time to take it out of the basement and make some :)

hehehe, waffles seem to be back in vogue again! banana waffles would have been lovely for my sore tummy today!

did you realise we keep buying this and that small appliances but hardly used..I have deep fryer(used less then 5 times),Georgeman grill,fruit extract machine,sandwich toaster,bread toaster,slow cooker,coffee machine and more...Imagine my kitchen loook so messy wt this stuffs sitting around*sigh*

really?? banana waffles can cure sore tummy? hmmm must try ...and see..
