Deep Fried Turkey

As usual on the eve of Thanksgiving I prepared a turkey to brine for the next day Thanksgiving's dinner .This year I decided to butterfly the turkey for easy cooking. I added 1 cup salt and 1 cup of sugar in a big pot of cold water submerge the turkey overnight.The next day I planned to roast the turkey but unfortunately my range oven broke down 10 minutes after I placed in the turkey..Well,since my oven is not working at all,(computerize function)I decided to deep fry the turkey..What else can I do at that critical moment,right? Turn out the deep fried turkey is not bad at all...I like the crunchy texture and taste on the ribs and wings ..beside that the seasoning I used is suitable for frying too..Of course ,I have to chopped the turkey into 4 parts before place in the fryer ..Too bad I don't have turkey fryer,so what can I do is use a very large stock pot fill with almost 2 gallon of oil..and deep fry the turkey on the stove instead of outdoor..









Ingredients:
15 lbs frozen turkey,thawed and remove the giblets from cavity
2 tbsp seasalt
2 tbsp paprika
2 tbsp garlic powder
1 tbsp coriander powder
1 tbsp aniseed powder
1 tbsp ginger powder
2 tbsp ground pepper powder
*mix well above seasoning in a bowl before rub all over the turkey*

For Brine:
1 cup sugar
1 cup seasalt
plenty of cold water

**********************************************
3 stalks Sage*optional*
1 can of butter or oil spray
2 gallon canola oil for frying


Method:
1:Butterfly turkey(use clever to cut open on the center of the breast).Prepare a large stock pot or container fill with cold water,add in 1 cup sugar and 1 cup salt.Make sure the water cover the whole turkey completely.Brine overnight.
2:Remove turkey from brine water ,pat with paper towel before rub with the mix seasoning inside out thoroughly.Then spray with butter oil .(Chop the whole turkey into 4 pieces before rub with seasoning for frying) but I didn't chop the turkey first bcos I plan to roast it before the oven broke down.
3:Heat oil in fryer at medium high heat (make sure the stock pot is big enough as fryer)Fill the oil 1/2 of the fryer level to prevent overflow when frying.
4:When oil temperature is about 350 F or hot enough,place one part of the turkey at one time into the fryer.Fry each part for about 20-25 minutes or until golden brown.
5:Remove fried turkey from oil into a large plate.Fry the rest of the parts before serve warm with gravy and cranberry sauce.

Almond Flavor Jelly/Jello

Months ago I bought few packets of flavor jello or jelly but didn't have opportunity to use until now.I always admire beautiful and creative jello make by many famous blogger when I was blog hopping.When I was vacationing in Montreal,Canada this summer I bought few cake mould..One of the mould is a pair of Bunny for making cold dessert..So yesterday I took this opportunity to some some jello using all the moulds..









Ingredients:
Top layer:(A)

1 pack Almond Flavor gelatin (130 gm)
300 ml water



Bottom Layer:(B)

3 tbsp gelatin
500 ml water
1/2 cup sugar or to taste
food coloring ( red,blue and green)



Method:


1:Prepare a small stock pot with water at medium low heat.Pour almond flavor gelatin (A)into the pot,keep stirring until dissolved.
2:Wash all the mould with cold water.When almond flavor gelatin bubbly boil,remove from heat immediately.Pour into the mould about 1 inch.Remove any bubble on the surface if any.
3:Transfer all the almond flavor gelatin moulds to fridge for 30 minutes or until it's harden.
4:Wash the stock pot and fill with (B) at medium low heat.Keep stirring until it's dissolved.When bubble boil,divided into small container to mix with your favourite color.Then pour on top of the almond flavor gelatin moulds.
5:Remove any bubbles on the top if any.Transfer back to fridge for another 20-30 minutes.Remove from mould and place on the plates.Serve cold .

Chocolate Chip and Cinnamon Raisin Waffle

Last week when I shop at Kohl's I saw many small appliances on sale. One of the appliance I like to get is a waffle maker!! I would like to get a medium range quality waffle maker instead of the expensive one or low quality maker...The reason is why waste $$ on an expensive machine that I know I won't be making waffle all the time and after awhile I tend to forget that I even bought the machine! lol! For the low quality maker,it's easily condemn and not worth the $$ and time to get it even I use it once a while..Anyway,this is my first time making my own waffle at home..Usually I just bought the ready make waffle from supermarket frozen section...As we know if we make the waffle our self we can choose our own favorite flavor or ingredients,right?
Tonight I try out the machine and make some chocolate chip and raisin cinnamon waffle for Mishu dinner..She was surprised and happy when she see she was serve with waffle!! especially the waffle have whipping cream and colorful sprinkles on the top!! She said yummy!! I adapted the recipe from HERE!! .I divided the portion into 2 smaller portion for 2 different flavor!! This recipe is a taker!!










INGREDIENTS

1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/8 teaspoon salt

3 large eggs, at room temperature

1 1/2 cups milk, at room temperature

1/2 teaspoon vanilla extract

1/4 cup melted unsalted butter( I used 1 cup butter)

1/4 cup sugar

1 cup mini-chocolate chips

1/2 cup raisin

1 tbsp cinnamon powder

pancake syrup for drizzling

Method:

1. Sift the flour, baking powder, and salt together in a medium bowl.

2. Separate the eggs and put the egg whites in a large bowl.

3. In a separate measuring cup or bowl, whisk together the egg yolks, milk, vanilla and 1 cup melted butter.

4. Add the milk mixture to the flour mixture and stir by hand or with an electric mixer until batter is formed. Do not over-mix the batter.

5. Whip the egg whites with an electric mixer until they just begin to hold a loose peak.

6. Scatter the sugar over the whites and continue beating until they hold a soft peak.

7. Fold the egg whites into the batter..Divided the batter into 2 portion if you want other flavor then chocolate chip..

8. Gently add the chocolate chips into the separate batter. Then fold in raisin and cinnamon powder in another portion batter.

9. Preheat your waffle maker accordingly to the manufacture direction..Use a big ladle to scoop I scoop of batter into the maker.Close the lid and cook until crisp and the waffle iron stops steaming – about 5 minutes. When waffle is lightly golden brown remove from maker.

10. Use a bamboo stick to remove the waffle to a plate.Drizzling with syrup,top with whipping cream or add your favorite toppings before dig in!

This delicious waffles recipe serves 6.



like this waffle maker coz it's can rotate both side and it's have non stick iron plate..
for $22 a waffle maker is not bad at all!!

Braised Beef with Carrot and Potato in Pressure Cooker

I seldom cook beef at home except porterhouse steak on grill or pan-fried which is so easy and simple to cook.Other then that I simply not creative or good enough to know which part of the beef is good to make stewed beef dish..Yesterday when I was food shopping at one of the local market I saw roast bottom beef on sale..a pound for $2.39 !! I guess it's a good deal!! I plan to braise the beef in pressure cooker. Usually I just use the pre-packed spices in condiments and I thought I had some at home.Unfortunately this afternoon when I prepare all the ingredients beginning to braise the beef I realise I have none of the condiment at home..Well,now I have to create my own spices for the braise beef..Since I can't eat beef,I try to minims the spices cuz I can't try the seasoning..to justify the taste.Within 20 minutes the braised beef was ready to eat ..That the magic of pressure cooker!! I afraid the beef was chewy or tough,so to make sure the meat disintegrate well,I had to use pressure cooker to braise it!! My daughter and hubby said it's delicious!! Hubby said the seasoning is right not too salty or overpowering .










Ingredients:

2 3/4 pounds bottom roast beef,cut to small cube
8 potato,peeled and cut 1/2
4 long carrot,peeled and cut 2 inch each
1 tbsp ground ginger powder
1 tbsp cumin powder
1 tbsp beef bouillon powder
1 tbsp anise seeds powder
1 tbsp ground coriander powder
1 tbsp paprika
1 tbsp sugar
1 tbsp salt
1 tbsp Worcestershire sauce
1 tbsp ground black pepper powder
5 cloves fresh garlic,peeled and sliced
3 tbsp oil
1 cup water,plus extra if you want more gravy

Method:

1:Prepare pressure cooker with oil and garlic at high heat.Fry garlic until fragrant,then add in cut carrot , potato and beef.
2:Add in all the seasoning and water into the cooker before close the lid and the knob.Mix the seasoning well with meat and liquid.
3:When the pressure cooker "whistling" that mean the ingredients is cooking furiously..Do not attempt to remove the knob while it's whistling..Cook the meat for less then 15 minutes.Remove cooker from heat and slowly release hot air from the knob using long tong or long ladle.
4:When all the hot air was release,slowly open the lid .Check the seasoning..
Serve warm with rice or bread as main dish.

Baked Flavored Whole Wheat Cracker with Tuna and Cheese

Sorry, I didn't update this blog for couple of week due to several reason..First of all, my gas range oven was out of order,can't bake or roast anything .....The second reason is:(read here) :L.A.Z.Y!! haha!! Maybe I'm in the blue mood or feeling down,don't have any interest to cook or to be creative to create meal for hubby..All I do for his meal for the last couple of days or you can said last couple of weeks was to order pizza,KFC ,cold cut meat and fast food for him.He doesn't mind I don't cook as long as I order a full pan of take out pizza for his lunch and dinner,he is a happy camper!! Honestly, I think he prefer fast food then my cooking.He always said this remark "remember I'm a American"! Well,today I feel better after seeing my new gas range oven arrived, so I decided to make my own creation of new appetizer for hubby..Hopefully he connect and converted my gas range oven ASAP..Need to bake and roast something pretty bad after been hibernate for a while..been slacking for months without oven..Turn out hubby love this tuna with cheese over baked whole wheat cracker!! He keep saying he absolutely love this mini stuff!!










Ingredients:
20 pieces square baked whole meal cracker(any flavor)can get the crackers in any supermarket
__________________________________
(A)
1 can albacore tuna 8 oz(prefer in water not oil) remove water and mashed up
1 medium onion,peeled and diced small
1/2 cup shredder cheddar cheese
salt and pepper powder to taste
4 tbsp mayonnaise

(B)
________________________________
1/2 small tomato,diced small
1/2 fresh avocado,diced small cube
Method:


1:Combine ingredients (A) in a medium bowl,mix well.Use a small tea spoon to scoop I tsp tuna mixture on top of the cracker.Top few diced avocado and tomato on the top of tuna mixture
2:Serve as appetizer or snack.
