Ravioli in Red Sauce with Shrimp

Don't you think Ravioli look like Chinese dumpling? For me whenever I see ravioli ,I imagine the pasta pouch fill with yummy delicious filling like pot sticker (Chinese Jiaozi) or Gyoza (Japanese version dumpling) !! I only bought fresh ravioli when there is a sale.Last weekend when I was food shopping at one 0f my favorite supermarket ,I saw ravioli on sale,so I grab a pack of cheese filling ravioli,thinking happily when I'm going to cook it.I prefer to get cheese filling rather then beef or chicken.Why? Because I wanted to add my own chicken and shrimp into the sauce!! hahaha!! As usual when I cook Italian pasta I used ready made pasta sauce in order to make my life easier..All I have to do is boil or cook the ravioli pasta before make the red sauce.It's just took me about 30 minutes to make this simple ,yet delicious chicken and shrimp cheese ravioli for our Sunday night dinner!! Viola!!










Ingredients:


1 pack fresh cheese ravioli pasta,1 1/2 lbs,cooked1 whole boneless chicken,cut diced,about 300 gm
10 shrimp,shelled and deviened
1 jar/1 lb Italian pasta sauce(Original flavor) any brand,
1 cup chicken broth or water
2 tbsp sugar
1 tbsp ground black pepper powder
1/2 cup Romano grated cheese
salt to taste
3-4 cloves garlic,peeled and minced
2 tbsp olive oil


Method:

1:Prepare large stock pot with hot at high heat.When water rolling boil,add in few drop of oil and ravioli.Cook ravioli for 10 minutes or until it's floated.Remove cooked ravioli from heat.
2:Heat a large deep skillet with olive oil and garlic at medium heat.Fry garlic until fragrant,add in chicken,sugar,ground pepper,grated Romano cheese and pasta sauce.Stir the pasta until bubbly,then use large sieve to remove ravioli from stock pot into pasta sauce.
3:Cook for another 10 minutes or until it's bubbly.Check the seasoning.( I microwave shrimp for 2 minutes) or add in shrimp into the sauce for 2-3 minutes before remove from heat.Dish out ,sprinkle with grated cheese before serve warm.

Steamed CherryStone Clams with Butter and Garlic

Over the weekend when I was food shopping at local market,I saw Cherry stone clam on sale: a dozen for $3.99.Well,since I'm a seafood lover who love any type of seafood or clam,why not? Unfortunately,I didn't check the bag handle to me by the seafood saler when I was at the store...At home when I unpack the clam I found it's only 11 clams instead of 12 clams.I guess the saler miscalculate the clams..Anyway,I won't go back to the store ask for another one clam..I think the seller will replace the clam for me but it's too much trouble..Just said I'm unlucky..I found a simple and easy way to make this scrumptious Cherry stone clam..since this clam is so fresh I just steamed it and drizzle with some fried garlic and butter..before I steam the clam,I soak it with some salt water to remove any excess soil in the clams.Wooooh!! less then 30 minutes I have my Cherry Stone clam steamed and served.One word:Delicious!!










Ingredients:


1 dozen Cherry stone clams,soak in salt water for 30 minutes
2 cloves garlic,peeled and minced
3 tbsp olive oil
3 tbsp salted butter
some chopped cilantro
Method:

1:Prepare steamer or double boiler with water at high heat.When the water is bubble boil,place clams into the steamer.
2:Steam the clams for about 3-5 minutes or until it's shell open wide.Meanwhile ,heat skillet with olive oil and garlic,fry garlic until golden brown,add in butter,mix well.
3:Remove cooked clams from steamer to a plate,drizzle with garlic mixture,sprinkle some chopped cilantro before serve immediately..

Whole Wheat Shell Pasta with Tuna

I think these days alot of people (especially home cook mom or dad) prefer to use whole wheat pasta instead of regular pasta.One thing I can be sure that they want to practise healthy eating habit now .When I was food shopping at local market over the weekend,I saw whole wheat pasta on sale.Of course I have to grab few boxes of different shape pasta since the price is consider good deal..So what should I do with all the whole wheat pasta? Eliot not really keen to eat whole wheat pasta but I still try to feed him healthier version of pasta..He complaint but still have to eat it..I guess some people not use to the texture and taste of whole wheat pasta yet!! Well,at least we should try to eat healthy now or else too late.... our life is priceless,right?









Ingredients:
1/2 box medium shell pasta,about 1/2 lb.Cook accordingly to the instruction on the back of the box..(al-denta)
3 cans (6 oz)of Albacore tuna(prefer in water not oil)remove water
4 tbsp mayonnaise,plus extra if too dry (low fat version)
salt and ground pepper to taste
2 tbsp Parmesan grated cheese

Method:


1:Remove cooked pasta to collard.Run pasta under cold water for 1 minute .Prepare a medium large bowl with mayonnaise,Parmesan grated cheese ,tuna,salt and pepper,mix well.
2:Add in cold pasta,toss well with mayonnaise mixture..Chill pasta in fridge before serve cold as appetizer or salad.

Creamy Broccoli Soup with Cheese and Bacon

This summer when we was vacationing at New England ,we ate at a Seafood restaurant in Maine .Hubby order an broccoli soup as the starter before his dinner.Both Mishu and him said the broccoli soup taste really good and finish it within minutes.I promised them I will try to make the similar soup when we come home from vacation.Well,it's been awhile since we came home and now I remember about my promises to make broccoli soup for them.I was "googling" for broccoli soup online and found best broccoli soup here !! Of course, I adapted the recipe to suit Mishu and hubby's taste .It's my 1st time making this soup and the result is really good!!.








Ingredients:
3 cups chicken stock/broth,plus extra
2 head fresh broccoli,washed ,removed stump and cut into small pieces
2 cups whole milk or heavy cream
1 cup shredded cheese
2 stripe cooked bacon,chopped
1 medium onion,peeled and chopped fine
4 tbsp butter
salt and ground pepper to taste
Method:
1:Steam or boil broccoli for 30 minutes or until mushy soft .(I do not puree the broccoli,so cook longer before hand before add into the soup first)Prepare medium stock pot at medium heat,add in butter and onion.Sauteed onion until lightly brown or fragrant.
2:Pour in chicken stock,broccoli and milk,simmer for 10-15 minutes.When soup bubbly boil ,add in cheese ,salt and ground pepper to taste.Stir soup with ladle and check the seasoning before dish out .
3:Sprinkle some chopped bacon into the soup before serve warm.
