Chuck Roast Beef

I run out of idea what to cook for hubby.Basically he preferred Western food rather than Asian food.One day when I was blog hopping I saw coleens recipes posting Chuck Roast Beef with her unique tips and wonderful idea that to braised the meat at low temperature until tender and juicy..I adapted her recipe slightly to my liking and hubby and my daughter love the meat and potatoes.If you like to know the detail method of preparing the meat,just hop over to her blog.







Ingredients:


4-5 lbs chuck roast beef
6-7 potatoes,peeled and cut quater
1 lb baby carrot
1 liter chicken stock or beef stock,plus extra if needed
2 tbsp salt or to taste
2 tbsp ground pepper Method:

1:Season salt and pepper all over the chuck beef for 30 minutes .Prepare aluminum skillet or pan at high heat.When pan is hot enough place seasoning beef on it for 5 minutes each side to seal the juice and browning.
2:Preheat oven at 325 F .Prepare large baking dish ,add in cut potatoes , baby carrot and pan-fry beef into the dish.Pour in chicken stock . Cover with aluminum foil and roast for 2 hours.Removed aluminum foil and roast beef for another 15 minutes.
3:Remove beef from oven and serve warm.

Green Squash with Roast Chicken

Green squash is available whole year long and the price is really affordable to everyone.I guess all our vegetables sold in East Coast come from California ,Florida and Mexico,that the reason no matter what season we have ample of greens and fruits in the market.I rarely buy green squash coz its not one of my favourite vegetable.Furthermore no one in my family like green except me!! Well, when I shopped at farm market I saw green squash on sale ,6 for $1.00..Maybe I should get some and try it,right? I also have some left over roast chicken and I might as well cook it with this green squash,no need crack my head to look and prepare for other meat .Honestly this dish is really goooood!! easy and simple to make ,yet healthy !!








Ingredients:
2 green squash,washed and sliced
3-4 cloves fresh garlic,peeled and chopped
2 tbsp butter
1 cup roasted chicken,cut small
1 tbsp chicken bouillon powder
salt to taste

Method:

1:Heat large skillet at medium heat with butter and chopped garlic.Sauteed garlic for 30 seconds or until lightly brown.Add in green squash and roasted chicken.
2:Use spatula to stir well,before add in bouillon powder and salt to taste.Keep stirring for another 5 minutes or until green squash soft and tender.Check the seasoning.(the green squash itself have plenty of liquid)
3:Dish out and serve warm.

Snow Crab Leg with Butter and Garlic

Last week our local market had Snow Crab on sale for $2.99 a pound. If it's not on sale Snow Crab will cost a bomb!! I'm a crab lover ,it's doesn't matter what type of crab available as long as it's crab,I'm sure whack it all with finger licking good!! Usually I prefer to cook crab with ginger and scallion Chinese method but I don't think Snow Crab is suitable pairing with these kind of herbs.Furthermore ,I think using butter and garlic is much better than ginger and scallion coz when butter and garlic infused into Snow Crab it's will give the Snow Crab Leg a better buttery aroma and garlicky flavor instead of herby flavor,right?








Ingredients:

2-3 lbs Snow Crab Leg,thawed(usually comes in frozen form)
7-8 cloves fresh garlic,peeled and chopped
4 tbsp butter
salt to taste
1 tsp ground pepper
1/4 cup Chablis or any white wine
Method:

1:Wash and cut Snow Crab leg into 2 pieces,set aside.Heat large skillet at medium high heat,add in garlic and butter.Use spatula to stir for 30 second or until fragrant.
2:Add in Snow Crab Leg and white wine,let it simmer for 5 minutes.Keep stirring for another 5 minutes before add in salt and ground pepper.Check the seasoning .
3:Dish out and serve warm.

Butternut Squash Mashed Potato with Raisin

When I cook steak or pork chop for our dinner,I will always make mashed potato as the side dish.But this time I decided to try something different then regular mashed potato.I never mixed butternut squash with mashed potato before and the experiment result is pretty impressive !! Butternut squash is available whole year long and it's easy to get from any local market ,on top of that the price is pretty cheap. If you're bore with regular mashed potato,why not give a try to Butternut Squash Mashed Potato? It's taste creamy and nutty!!







Ingredients:
1 butternut squash,about 3-4 lbs,roasted and mashed
5-6 medium size Idaho potatoes,peeled,boiled and mashed
1 cup whole milk,plus extra if needed
1/4 cup grated Parmesan cheese
1/2 cup raisin
Method:
1:Cut butternut squash into halve,apply some oil on it before roast in oven at 375 F for 45 minutes or until soft.Then use a large spoon to remove the flesh before blend with milk until fine.
2:Peel and cut potato into small chunk.Boil for 20 minutes or until soft then mashed while is still warm.
3:Prepare a large bowl ,add in mashed potato and blended butter squash with milk together.Use a spatula to mix well..
4:Sprinkle grated Parmesan cheese and raisin into it before serve warm with main dish.

Potato Salad with Raisin

Potato is relatively cheap and abundant here in US and A.Potato salad is a must side dish to serve at party ,picnic or almost every dinner.There are plenty of potato salad recipe out there but the one and only my family loves is Potato Salad mix with hard boiled egg,bacon and raisin.This recipe is really simple and easy to make ,not to said it's really delicious!!







Ingredients:
5-6 potatoes,peeled ,cut and boiled
5-6 strip cooked bacon,crushed
1 cup raisin
5 hard boiled egg,shelled and chopped
1/2 cup or more mayonnaise
ground pepper to taste
salt to taste



Method:

1:Prepare a large bowl with mayonnaise,eggs,cooked bacon and potatoes,mix well.
2:Add in salt and ground pepper to taste before add in raisin and mix well.Chill in fridge for 30 minutes or more before serve cold as side dish.
