Spaghetti Meatball

One of Mishu favourite meal is meatball spaghetti.She only like red pasta sauce .I understand kids preferred red sauce then white sauce.Well,I guess all American kids like this classic favourite meatball spaghetti,right?I believed it's a popular American favourite comfort food invented by American not from Italy. These days we can get ready make meatball spaghetti from frozen section in the supermarket to make life easier. But for me I usually make the meatball and sauce myself.I prefer to add more meat and flavor into the dish.Cooking this dish at home is more cost effective than buying the ready make at frozen section coz the portioning in the package is really small .Too bad I don't have big family who can finish the dish at one meal,only Mishu and hubby loves this dish.So to save time and cost, I will cook the sauce in big quantity and freeze it in freezer for later usage.







Ingredients:

1 box or pack spaghetti,cook accordingly to the instruction on the box
2 bottle of marinara or meat flavor sauce(any brand)
salt to taste
8 cloves fresh garlic,peeled and chopped
3 tbsp olive oil
2 cube beef bullion
3-4 tbsp butter
2 tbsp ground black pepper
I large onion,peeled and diced small

Meatball:

5 lbs minced beef,80-90 % lean
2 tbsp ground black pepper
2 tbsp beef bouillon powder
1 tbsp seasalt
2 tbsp dried oregano
3-4 tbsp corn flour
2 eggs

3 tbsp grated Parmesan cheese
Method:

1:Boil water in large stock pot to cook spaghetti.When water rolling boil add in pasta and cook accordingly to the instruction on the package.Drained cooked pasta before add in butter and set aside.
2:Mix minced beef with all the seasoning,eggs and corn flour in a large bowl,mix well and shape into small ball.Prepare a large pot with water at high heat.When water rolling boil,add in all the shape meatball into the pot.Cook all the ball for 5 minutes or until floated.Remove and drained cooked meatball from pot and set aside.
3:Meanwhile prepare large stock pot at medium heat,add in olive oil and chopped garlic.Saute garlic until lightly brown ,add onion and marinara sauce.
4:Stir in seasoning into the sauce and cook until bubbly .Add in meatball into the sauce before remove from heat.
5:Place your desire portioning pasta into plate before scoop meatball sauce onto it.Sprinkle some grated Parmesan cheese on before serve warm.

Roasted Chicken with Caper

I bought a bottle of vinegered caper long time ago but still make no effort to use it until now.Actually I plan to cook it with salmon but didn't have the opportunity yet! Well,now I would like to experiment with whole chicken..I think roasting whole chicken using caper is quite interesting even though I never try it yet!.The final result is not really bad,the chicken is moist and juicy plus it's have exotic fruity flavor!!








Ingredients:

I whole chicken,about 3-4 lbs,clean and washed
5-6 potatoes,peeled and cut
1 large carrot,peeled and cut
2 oz caper in vinegered
1 large onion,peeled and cut
2 tbsp sea salt
2 tbsp ground pepper
2 tbsp olive oil
1 tbsp sugar
I can spray butter
Method:

1:Prepare aluminum foil over baking tray.Rub seasalt,ground black pepper,sugar ,olive oil and caper all over whole chicken,potatoes ,onion and carrot..Season all the ingredients for 1 hour or more in baking tray.
2:Preheat oven to 375 F.Spray butter all over chicken before bake whole chicken for 45 minutes - 1 hour or until cooked.
3:Remove chicken from oven for 10 minutes before cut and serve warm.

Tuna Bun/Bread

Whenever I visit Chinatown at NYC, I must get tuna bun from the Chinese Bakery there.Well since travelling to NYC from Long Island is not really far,it's about 25 miles one way but I can said it's really a nuisance especially the horrific traffic at the expressway not to said looking for parking spot is really challenging in NYC. The last time I was in the city I got a summon ticket again!! Cost me big $65 for nothing!! So to solve my craving I bake this tuna bun myself at home. I adapted the dough recipe from my previous classic-dinner-rolls for this tuna bun and it's really taste fantastic and moist!! I also take this opportunity to use the oven to bake during this cold winter to warm up my kitchen as well. I invited hubby to try this tuna bun and he love it!! he said he never had bun with tuna filling!! I guess Western bakery never make tuna filling in their bread or bun.. well....






Ingredients:

Dough:
4 cups bread flour ( or unbleached flour is OK)
1 cup whole milk or 1% milk
8 tbsp butter (room temperature) ,plus extra for brushing
1 tbsp instant active yeast
1/4 cup warm water (105 F to 115 F)
1/2 cup sugar
2 eggs ,room temperature
1 tbsp salt
1 tbsp bread improver*optional*
1 egg + 2 tbsp water for brushing

Filling:

4 can of tuna in water,4 oz each,removed water
4-5 tbsp mayo
1/4 tsp salt
1/4 tsp ground pepper
*mix well in a medium bowl*


Method:
(I used bread maker,so just dump everything in the BM) But below is the right step by step method according to the original recipe
1:Heat the milk to 120 F to130 F:add the butter and set aside to cool to room temperature.Meanwhile,in a large bowl dissolve yeast in warm water.Add cooled milk,eggs and sugar to dissolved yeast and stir to blend.
2:With a wooden spoon stir in 2 cups of the flour,bread improver,butter and the salt:stir until smooth.Add 2 cups of remaining flour,1 cup at a time,stirring vigorously for 3 to 5 minutes until the dough is smooth and elastic and only slightly sticky.(Only if needed,after 3 minutes of stirring and dough is overly wet,stir in 1 tbsp flour at a time).Knead the dough until well combine.
3:Cover the surface of the dough with lightly oiled plastic wrap.Cover the top of the bowl with a second piece of plastic wrap.Let rise until doubled(1 to 2 hours)
4:Gently press the dough to deflate.With lightly buttered hands pinch off generous 1 inch pieces of dough.Fold the dough over,turning and tucking the edge to form a ball,about 50-80 gm each.Use a rolling pin to flatten the ball and scoop 1 tbsp tuna filling in the center of the dough.
5:Pinch the seam together to seal.Let rise until fully doubled(about 1 hour).Brush buns with egg wash.
6:Heat oven to 400 F.Bake buns for 20 to 25 minutes or until well-browned.If needed,to prevent over browning,cover the balls with foil during the last minutes of baking.Remove from oven.Brush with softened butter to make the bun look shinning.Return to oven for 1 to 2 minutes.
7:Remove bun immediately from oven to a wire cooling racks.Let cool about 5 minutes before serving.

Pork Sausage with Marinara Sauce and Cheese

To cook a great main dish that look delicious or make an ordinary meal look extremely appetizing you don't have to slave hours with all the preparation yourself.Just step out to the local market and get the pre-make pork sausage,pan-fry before sprinkle with cheese and marinara sauce to make simple and easy main dish!! Yoo---hooo!! yea...that really delicious,simple and easy to cook ,not to said it's really great pairing with pasta!! If you run out of idea what to make for dinner,how about try this pork sausage with marinara sauce and cheese ? I promise you ,you won't regrets it!!










Ingredients:

1 pack pork Italian style sausage,2 lbs
1 can or bottle Marinara Sauce
4-5 cloves garlic,peeled and chopped
1 cup shredded Cheddar cheese or plus more
1/cup Parmesan cheese


Method:
1:Preheat oven to 375 F.Heat skillet at medium heat.When skillet or pan is hot ,place Italian pork sausage on it.Pan-fry both side of the sausage until lightly brown,about 5 minutes.Pan-fry until all sausage finished.Dish the cooked and juice sealed pork sausage into oven baked dish.
2:Pour Marinara sauce over the sausage first before sprinkle shredder cheese and Parmesan cheese over the sauce.
3:Bake sausage in oven for 10 minutes .Remove sausage from oven and serve warm with pasta.

Oatmeal Cranberry Almond Cookies

I baked this batch of Oatmeal Cranberry Almond Cookies for Christmas. Actually the original recipe used raisin but I replaced raisin with dried cranberry. Anyway you can add any dried fruit to your preference.This old fashioned favourite cookies with nutty almond crunch is really crunch-a-delicious!! If you're oatmeal and almond cookies lover,you might want to try this recipe:)








Ingredients:
1 1/2 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 cup (sticks) unsalted butter,softened
1 1/2 cups firmly packed light brown sugar
2 large eggs,at room temperature
1 tbsp vanilla extract
1 1/4 cups rolled oats
1 1/2 cups dried cranberry
1/2 cup finely chopped toasted almonds
Yield 3 dozen cookies

Method:

1:Preheat oven to 350 F.Prepare 2 baking sheet with parchment paper. In a large bowl,sift together the flour,the baking soda, and the salt.Set aside.
2:In a large bowl,cream the butter and the sugar until smooth,about 3 minutes.Add the eggs the vanilla extract ,mix well.Add in oat and the flour mixture and thoroughly.Mix in the raisin and chopped almonds.
3:Drop by rounded teaspoonfuls onto ungreased cookies sheets,leaving several inches between for expansion.Bake for 15-18 minutes or until lightly golden brown.
4:Cool the cookies on the sheets for 1 minute,then remove to a rack to cool completely.


Note:

To toast almonds,place on a baking sheets in a 325 f oven for approximately 10-15 minutes or until lightly browned and fragrant.

Green Tea (Matcha) Bread/Bun

I like sweet bun or bread rather than regular dinner roll. I still have plenty of green tea powder (matcha)left in my pantry. Since our weather is freezing cold now ,utilized oven to bake is another option to warm up my kitchen. I also play around with the dough to create different shape and pattern ,it's quite interesting and fascinating to see the final result. Not to said this bread/bun is really moist and soft..









Ingredients:

200 gm Bread flour
1 tbsp Instant dried yeast
1/2 cup Sugar
½ tsp Salt
30 g Unsalted butter (soft)
140 ml whole milk
1 cup Cheddar Cheese (grated)
1 tbsp bread improver*optional*
2 tbsp green tea powder(matcha)
1 egg plus 2 tbsp water

Method:
(I used bread machine to do the work) so if you don't have BM,use the step below)


1:Put the flour and yeast in a bowl, whisk to combine, add the sugar and salt whisk again. Pour the milk mixture into the bowl, use large spoon to mix everything together. Put the butter in the bowl and rub until all butter is distributed, and knead briefly to bring all the ingredients together.
2:Take the dough out of the bowl and divide dough into 2 portion.Mix match into the other portion and knead separately, until the dough is soft, smooth and elastic about 10 minutes.Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size about 1 hour. Line a baking paper in the pan and set aside.
3: Preheat the oven to 180°C/370 F. Take the dough out of the bowl. Gently press down the dough and shape to your desire shape and size before placed into prepared pan.
4: Brush egg wash over the dough then scatter cheddar cheese all over.

5:Let the dough rise until almost double in size.Bake for 25 or until the bread is golden and the cheese is slightly brown.
