Jamaican Pumpkin with Pork and Mushroom

Pumpkin season is here now.There are many type of pumpkin sold in any farm market or supermarket. I bought 1/4 cut of Jamaican Pumpkin .These pumpkin are popular in Hispanic countries and throughout the Caribbean.They're large, so markets often cut them up before selling them to customers. I decided to cook this pumpkin with pork and mushroom,it's a simple and savory sweet dish.







Ingredients:


1/4 cut Jamaican pumpkin ,cut outer skin and sliced
2 cloves fresh garlic,peeled and sliced
2 tbsp butter
300 gm or more lean pork,sliced
1 /2 box fresh fresh mushroom,removed bottom stump,sliced
1 stalk scallion,washed and cut
1/4 cup water or plus extra
salt to taste
Method:

1:Heat skillet at low heat with butter and sliced garlic.Fry garlic for 40 second or till lightly brown.Add on pork and pumpkin,increase heat to medium high,keep stirring the ingredients.
2:Add in water,let the pumpkin simmer until soft.Add in salt and mushroom,use spatula to stir the ingredients till well combined or the liquid almost dry up..Lastly add in cut scallion and check the seasoning.
3:Dish out and serve warm.

Looks like Jamaican pumpkin are those we had in China.
I have yet tried any stir-fry with pumpkin. I bet it tastes as super as it looks!

Man, and our pumpkin season is slowly coming to a class. That looks awesome and i think pumpkin would have added that sweetness to this stir fry.

Gert,it's look like japanese pumpkin but the skin is yellow instead of green color! it's good,soft and creamy!
