Fried Sweet Potato Donut with Sprinkle Topping

Previously I make some Malaysian style Sweet Potato Donut (Kuih Keria) coated with caramelize sugar ..You can check it out HERE !!
I still have some leftover sweet potato, I better do something with it before it's goes bad .I figure since I love sweet potato donut ,why not make it again But this time with sprinkle colorful topping ..My daughter only eat the sprinkle topping on the top as usual. She a candy freaks!. Here , I would love to share my simple and easy Fried Sweet Potato Donut with you.

Ingredients:


300 gm yellow sweet potatoes (peel and boiled until soft)
1/4 cup all purpose flour (sieved),plus extra for dusting
1/2 tsp baking powder
enough oil for frying (a bout 2 cups)






Ingredients For Coating:


3 tbsp sugar
2 tbsp water
Colorful sugar sprinkle

Method:


1:Peel and boiled sweet potatoes until soft .Mashed sweet potatoes when it's still warm ,combine with flour and baking flour in a medium bowl,mix well.If it's too dry,add in 1-2 tbsp water.

2:Knead the dough well ,then use rolling pin to roll the dough out to 1 1/2 inch. Dusting some flour on the surface if necessary,then use donut cutter or round cookies cutter to cut the dough shape out.If you use cookies cutter to cut the outer round shape,then use pipping tip to cut the hole out. If you don't have pipping tip,try to be creative, use anything small and sharp to cut the hole.

3: Prepare oil in fryer at medium heat,deep fry sweet potato rings until golden brown.Dish and drain on a paper towel ,set aside.

Method For Coating:
1: Use a clean small pot with low heat to cook sugar and water till syrupy .Add fried sweet potato rings and keep stirring till all potato rings are well coated with syrup . Then quickly spread sugar sprinkle while the sugar is still wet and warm.(Do not use high heat when cooking syrup)
2: Serve warm or cold with tea or coffee.

Yield about 10 pieces.

ooh ... yummy. I love love sweet potato donuts. Can't get enough of them. :) Alternatively you can make them into a small ball. ;)
