Fillet Mignon Patties For Burger

What is fillet mignon? Fillet Mignon is considered the king of steaks because of its tender, melt in the mouth texture. A prime fillet mignon can literally be cut with a fork. This beef cut can be quite expensive when dining out, but much more reasonable to make at home, especially if you purchase a whole tenderloin.
Friends of mine who is a Hibachi steakhouse chef offer me few pounds of end cut fillet mignon to take home when I visit them last month. They just want the prime center cut of fillet not the surrounding sides meat. Eventually, the end cut of side cut meat is going to trash..Most of time I buy ground minced from supermarket and now I can ground my own beef with the new grinder I bought. Now I would like to share my simple ground filet mignon patties recipe with you:)


5 lb ground minced beef
2 tbsp ground black pepper
2 tbsp fine salt
2 tbsp paprika
2 tbsp garlic powder
1 tbsp fine sugar
2 tbsp caynne powder
2 eggs
2 tbsp corn flour
2 tbsp all purpose flour

Method For Patties:

1: Combine all seasoning,eggs,flour and ground beef in a large bowl. Mix well thoroughly until blended.

2:Shape patties about 1/2 -3/4 inch thick ,about 200-250 gm each. Place shaped burger in air tight container,for each layer place a wax paper in between the patties for easy remove when frozen. Repeat the ground mixture until finish.

3: Store the shaped patties in freezer.When you need to cook,just removed each patty with butter knife.

4: I used Foreman Grill and sometimes non-stick skillet to grill the burger.No oil needed when grilling in skillet. I also didn't cook through the patties coz I believed fillet mignon meat is better cook medium rare.

5:Top with lettuce,cheese or tomato,then sandwich with bun.Serve warm immediately. This fat and juicy burger is really delicious !! Hubby love it!

The burger look so fat and juicy!! Wish I can sink my teeth into it :) Acme filet mignon is also on sale here so going to get some and freeze it up for grilling.
