Stuffed Steak with Asparagus and Mozzarella

Previously I have try this recipe with chicken ,it's turn out really great! Check out my stuffed chicken wt asparagus and mozzarella here !! And now I would like to use beef- Sirloin steak to replaced chicken ,cook in same way for hubby. The down side of this dish is that I broiled the steak too long, that the reason it's too dry.If you use steak instead of chicken to stuff asparagus and mozzarella, remember steak don't have to cook all the way through to prevent the meat from dry out and chewy. Hubby always said ,I dunno what I miss by not eating beef. He said US have the best beef available. Well...if you're my regular readers you know I don't consume beef due to religion reason..

2 lbs sirloin beef (sliced thin)

1 lb asparagus (removed bottom end and blanched)

1 lb mozzarella cheese ( cut strip)

5-6 stalk scallion (wash and remove bottom root)

1 pack strip bacon

2 tbsp Parmesan cheese

1/2 tsp salt

1/2 ground black pepper

1: Wash and remove fat from beef then slice beef thin about 1/4 inch each piece.Repeat the procedure until finish.Pat dry with paper towel before seasoning with ground pepper and salt.

2:Preheat oven to 375 F.Wash asparagus and scallion.Remove asparagus bottom end tip and cut off scallion bottom end root . Blanched asparagus with hot water for 2-3 minutes.

3:Wrap 2 or 3 thin pieces beef over asparagus, scallion and mozzarella inside in oblong shape, then wrap bacon around the beef wrapped. If a piece of bacon is not enough to cover and wrap the beef then use 2 or 3 pieces.

4: Place all the wrapped beef in casserole baking dish and broil for 15 minutes or until the bacon crisp and golden brown on the surface. Sprinkle with some Parmesan cheese and serve warm as appetizer or meal.

I figure out to reduce the broiling time to 15 minutes instead of 25 minutes to prevent beef from over dry and chewy.
