Blueberry and Banana Cake

Blueberries is on sale now! A small punnet of 6 oz blueberries cost only $1.00! Really cheap,right? Mostly our blueberries come from New Jersey.I understand consume blueberries may have many health benefits to us. I always mix fresh berries into my daughter yogurt,she loves it! But she can't finish 3 punnets of blueberries in a week,so before it's go bad I decided to bake a Blueberry and Banana Cake.


Ingredients:


1 cup all purpose flour


1 /2 tsp baking powder


1 large overripe banana


1 punnet blueberries


4 tbsp butter,softened,or soft margarine


1/2 cup (115 gm) sugar


1/2 tsp vanilla extract


2 eggs


2 tbsp sour cream










Method:


1:Prepare a round 8 inch x 2 inch baking pan with parchment paper or greased.Preheat oven to 375 F/190 C.


2:Sift together the flour and baking powder in a large mixing bowl. Peel bananas,put them in a bowl and mash with a fork.


3:Combine butter,sugar and vanilla extract,beat together until light and fluffy.Gradually add eggs,beating well after each addition.Stir in the mashed bananas and sour cream.Add in the flour mixture,whisk mixture until well combine.Fold in blueberries with spatula until just combined.


4:Pour batter into the baking pan.Bake for 30 minutes or until well risen and golden brown.Transfer to a wire rack and let cool completely before serve.

yup! blueberries are really healthy! You're fortunate you can get it cheap! It is so expensive here! :)

Loving those blueberries! When it's on sales, I always buy 5-6 punnets, my girls eat 1 punnet in a setting. They really loved it.

I'm liking this recipe. I think it's a bit strange, the only way I can enjoy blueberries is when they are immersed in recipes like yours.
