Twice Baked Potatoes

Potatoes is relatively cheap here in US.For Asian rice is their staple food but for American ,they prefer potatoes .I'm not a potatoes freak but hubby love potatoes .Usually I like to baked or mashed or fried french fries for him as side dish with his meal..Well,since I bought a packet of 5 pound Idaho potatoes ,I would love to baked some potatoes for our Thanksgiving dinner.Instead of scallop potatoes or mashed potatoes as usual,I would like to make something different for our dinner on this special day..Here is my Twice Baked Potatoes..


Ingredients:


5 medium potatoes (scrub and wash)


1 cup shredder cheddar cheese


2 tbsp butter (softened)


1/2 tsp salt


1/2 tsp ground black pepper


1 sprig dill (chopped)


5 strip cooked bacon( chopped) plus some extra for sprinkle


1 tbsp olive oil




Method:


1:Preheat oven to 325 F.Scrub and wash potatoes.Cut each potatoes into half lengthwise and rub some olive oil on the cut surface.


2:Prepare baking casserole to place cut potatoes in the oven .Bake for 1 hour or until tender.Set aside to cool slightly.


3:Using a spoon,scoop pulp from each potatoes half,leaving a 1/4 to 1/2 inch shell.Place pulp in a medium bowl.Se a side the shell.


4:Using a potatoes masher or fork,mashed potatoes pulp until smooth or chunk.Stir in relish,butter,salt,ground pepper,cheese and bacon.Spoon potatoes mixture into each potatoes shell.Place,filled sides up in a baking pan.Sprinkle some chopped dill and bacon on the top.


5:Bake for 25-35 minutes or until heated through.Serve warm as side-dish.

I remember the first time I eat this potato dish was at Chilis and they were good but I never try making it. I am sure Carlos will like this dish. Thanks for sharing it.

My husband loves this recipe so much so that I have to bake for him at least twice in a month. Certainly a keeper.
