5 medium potatoes (scrub and wash)
1 cup shredder cheddar cheese
2 tbsp butter (softened)
1/2 tsp salt
1/2 tsp ground black pepper
1 sprig dill (chopped)
5 strip cooked bacon( chopped) plus some extra for sprinkle
1 tbsp olive oil
1:Preheat oven to 325 F.Scrub and wash potatoes.Cut each potatoes into half lengthwise and rub some olive oil on the cut surface.
2:Prepare baking casserole to place cut potatoes in the oven .Bake for 1 hour or until tender.Set aside to cool slightly.
3:Using a spoon,scoop pulp from each potatoes half,leaving a 1/4 to 1/2 inch shell.Place pulp in a medium bowl.Se a side the shell.
4:Using a potatoes masher or fork,mashed potatoes pulp until smooth or chunk.Stir in relish,butter,salt,ground pepper,cheese and bacon.Spoon potatoes mixture into each potatoes shell.Place,filled sides up in a baking pan.Sprinkle some chopped dill and bacon on the top.
5:Bake for 25-35 minutes or until heated through.Serve warm as side-dish.
