Dinner Roll For Thanksgiving

I baked a basket of dinner roll for our Thanksgiving's dinner.I want to make my own fresh baked dinner rolls, not store bought dough.I know it's easier to use store bought dough but would love to try the recipe from BHG's magazine. I bake them after the turkey is done.Actually I adapted the recipe from Better Homes and Gardens magazine which I subscripted. The original name for this dinner roll is Pull-Apart Dinner Roll but I didn't use the method shown in the magazine.Instead of using pizza cutter to cut the dough into strip,I roll the dough in 3 little balls to bake in muffin pan.

Ingredients:

1 cup milk

2 tbsp sugar

1 tbsp shortening

1 tsp salt

1 tbsp active dry yeast

1/4 cup lukewarm water

1 egg ,beaten

3 1/2 -3 3/4 cups all purpose flour( I used bread flour)

For Glaze:

1 egg yolk with 1 tbsp milk

2 tbsp raw sesame seeds

Method:

1:Combine milk,sugar,shortening and salt in saucepan,heat to lukewarm( 100 F)

2:In a large bowl dissolve yeast in warm water.Add egg and milk mixture.Gradually stir in enough flour to make a soft dough in dough hook mixer.Let the dough mixer knead until it form a solid ball.(If you don't have dough mixer, just knead with hands as the original recipe instructed)

3:Place in greased bowl, cover and let it rise double in warm place.(1 hour)

4:Punch dough down, turn out on lightly floured surface, allow to rest for 10 minutes.

5: To shape the roll, form the dough into a square shape. Then take a knife and cut it into 12 pieces. Then from 12 pieces, each piece divided to 3 small pieces to shape to the rolls, which is very simple. Just take each small piece of dough and roll it into a round shape in your palm.

6:Prepare muffin pan, fill each muffin hole with 3 pieces of roll ball dough.Cover and let it rise until nearly double in size ( about 30 minutes)

7:Preheat oven to 400. Brush eggs glaze and sprinkle some sesame seed on top of the dough before bake for 15 minutes or until golden brown at 375 F.

8:Remove from pan and serve warm with dinner.

Note:

We eat the dinner roll one hour after baked and found the outside crust is quite hard.Anyway,I have to microwave the dinner roll for 20 second each roll for it's to get soft again..I think I should reduce the flour quantity, maybe to 3 cups instead.Anyone care to share your experience using this recipe?
