Blueberry and Strawberry Muffin

It's been awhile since I bake any muffin...Whenever I shop at my local farm market,I always get fresh fruit for my daughter..Luckily fresh strawberry and blueberry sold at our farm market is relatively cheap.I can get a pound of strawberry for $1.50 and a punnet of blueberry for $1.00..good price ,right? I encourage my daughter to eat any fresh fruit whenever I can but sometimes,before she can finish the fresh fruits I bought it's goes bad and rot.As we know berries won't have long shelf life..so I decided to bake some muffin ..Here is goes...Blueberry and Strawberry Muffin.



Ingredients:



1 1/2 cups all purpose flour



1 tsp baking soda



1/4 tsp salt



1/2 sugar



3 large egg



3 tbsp butter



2/3 cup blueberry flavor yogurt



1 tsp vanilla extract



3/4 cup blueberries



1/2 cup strawberry(cut halve)




For Glaze(brushing)*optional*


1 cup sugar powder


2 tbsp butter


3 tbsp milk









Method:


1:Prepare 12 muffin paper liners in muffin pan.Preheat oven to 375 F.


2:Sift the flour,baking soda and salt into a large mixing bowl.Add sugar and mix together.


3:In a separate bowl,whisk the egg together.Add in butter,yogurt and vanilla extract and mix together well,then stir in the fresh blueberries and strawberry until thoroughly mixed.Add the fruit mixture to the flour mixture,then gently stir together until just combined.Do not over stir the batter-it's fine for it to be a little lumpy.


4:Divided the muffin batter evenly among the 12 cups in the paper liners.(they should be about 2/3 full).Bake for 25 minutes or until risen and golden.Remove muffins from oven and serve warm or place on cooling rack.


5:Meanwhile use a small sauce pan to make sugar glaze.Add sugar powder ,butter and milk.Cook until the sugar turn white milky and thicken.Remove from heat set aside.Brush the glaze on the muffins.

This muffin recipe looks easy to try. Thank you for sharing it. I used to buy muffin from Sam's club. But it always come in a big bag. If I can make it myself, it will save me lots of space in the freezer.

That's very cheap for strawberry and blueberry. Here is running $2.50 each. The strawberry kinda become mushy when baked huh?

The strawberry and Blueberry at your place is really cheap. I just bought 2 small punnet of blueberry for $2.50 each. If I can get $1.00 each I will freeze lots of them up :)

Those look gorgeous! The tops are perfect, and the glaze gives it a finishing touch.

aiyooo why but muffin banyak banyak kat Sam's..Usually I tamak juga,kata kan murah beli la banyak,but sampai akhir,tong sampah pergi la..I think it's the same cost if we just bake cukup makan.Try bake sendiri,lagi fresh!

Yes,I remember when my daughter want strawberry when we was in Msia,go to Sogo,surprise when I see the price!! RM 15 a pound!! at last didn't buy any!!told her come back to US and eat as much as she wanna!! lol!

I think soemtimes when the farm market have extra stock they sell at $1.00 if not it's $2.50 each.Now I use your method to freeze it for later use. Thanks for the wonderful idea.

Actually muffin don't have topping but hubby refuse to eat without glaze or topping so I add some glaze on it.Thanks for visiting:))

Ah, you put yogurt.. I have never used that in muffin... does that make the texture better?
I like the shape of you muffins!

I think the method to use yogurt is more healthy..as for the texture it's more moist...
