Vegetables Curry

My neighbour gave me some tomatoes from their garden and my own garden also produce some nice red tomatoes .Well, what to do with all the tomatoes ?. It's been awhile I cook vegetables curry,so I decided to cook some curry vegetables for myself but luckily that day my friends come to visit me from NYC and help me finish half pot of the curry .Too bad I didn't grow my own okra,so I get some okra from Indian store nearby.I make my own curry paste instead of getting the ready prepacked curry paste .



Ingredients:



1 lb okra(cut head and tail)


3 tomatoes cut quarter


1 large onion(cut quarter)


3 eggplants(cut 2 inch)


2 tbsp spicy shrimp paste (recipe here )


2-3 tbsp Baba's brand Curry powder


1 can coconut milk(400gm)


1 cup whole milk


2 cube vegetable bullion


2 tbsp sugar


1 tbsp salt


1 tbsp oil







Method:


1:Wash and cut all vegetables


2:Prepared large sauce pot with oil at high heat.Add in spicy sambal chili and curry powder into it,stirred and mix well for 2 minutes.


3:Add in coconut milk and whole milk in the pot.Let the liquid rolling boil ,then add in all vegetables expect tomatoes ,let it cook for 10 minutes.Add in all the seasoning and tomatoes .Then removed from the sauce pot from the heat.Serve warm with rice,noodles or roti(bread).Serve 6 -8 person






Note:




I prefer to make my own paste.You can get ready make paste from Asian store if you find making your own chili paste is too much work.You can adjust the seasoning and spiciness to your taste as well as to add any vegetables to your likeness.Enjoy!

This looks very appetising...a bowl of rice is not enough with this...I 'm just too lazy to cook these days...

With the tomatoes and okra, just lack a fish head to make it fish head curry!

looking at your curry reminds me of my frozen curry laksa in the fridge that I ta pau from my nephew's wedding dinner.

Don't think I can ever cook a nice curry like yours not to mention mixing own curry paste :(
