Ingredients for the sauce:(My mom version but I modified to suit my taste)
4 to 5 cup refine sugar(depend if you want your sauce thicker add more sugar)
2 tablespoon of chili paste or Sambal Olek
5-6 chili padi aka thai's bird chili(chopped fine)
2 tablespoon of shrimp paste(har ko)
2 tablespoon of caramel black thick sauce(I use Yuen Chun brand)
1/2 tsp of salt
I lbs of fried/roast crush peanut
Method:
1:Prepared above sauce, mix all the ingredients in a mixing bowl ,let it sit for 10 minutes except peanut.Scoop the well mix rojak sauce in a small bowl, set aside.
2:Use the same mixing bowl ,add all the cut fruits and cruller .Add the rojak sauce one spoon at one time in your mixing bowl.Depend again how much you want to eat at one time. You still can keep your extra sauce in fridge ,good for 6 months.Fruit like pineapple and cucumber tend to make your sauce watery if you didn't eat ASAP after mixing with the rojak sauce.
3:Add peanut when you're ready to eat to prevent the peanut from getting soggy.
I'm out of luck that day...I keep choosing the right size and freshness of jicama in the market...Now look what I got myself!!....
A rusty or maybe called as rotten jicama!!I don't dare to eat this jicama at all...what a waste ..just throw away!!.
Note :
You can use any fruit you like depend on your preference. You can adjust the spiciness, sweetness and thickness to your taste..The key ingredients is shrimp paste!..yes,it's smell pungent but taste really good!! You will get the kick out of this salad!
