Oregano Salmon

Last week when I was in Flushing ,Queens I bought quite alot of fresh fish and one of them are fresh Salmon.I like to cook Salmon for Elliot and Mishu but Elliot not a fish fan , he reluctant to eat salmon expect sushi or sashimi.Consuming salmon is considered to be reasonably healthy due to the fish's high protein, high Omega-3 fatty acids, and high vitamin content.Usually I just rub with salt and pepper and pan fried the salmon but this time I want to change to something new.While I'm thinking how to cook the salmon I look across my backyard and saw my oregano grown green and healthy on the ground.Yes!! Oregano from my garden!.


Ingredients:


I piece fresh salmon


1/4 tsp salt


1/4 pepper


1 sprig fresh Oregano(removed the leaves)


1 tsp olive oil







Isn't it beautiful? Oregano is high in antioxidant activity, due to a high content of phenolic acids and flavonoids.It has an aromatic, warm and slightly bitter taste. It varies in intensity; good quality is so strong that it almost numbs the tongue, but the cultivars adapted to colder climates have often unsatisfactory flavour. The influence of climate, season and soil on the composition of the essential oil is greater than the difference between the various species.





Method:


1:Clean and wash fresh salmon,pat dry with hand towel.Rub with salt,pepper and oregano leave,leave for 20-30 minutes in fridge.


2:Heat skillet with olive oil at medium heat,pan fried the seasoning salmon both side until golden brown.


3:Serve warm with rice,potato or salad.

It does look delicious! I really like fresh oregano and think it's kind of under-used by a lot of people.

I will skip the frog legs but this Salmon recipe is right up my alley. You have a great blog with great photos and easy to understand recipes and instructions. I am visiting you today from the foodie blog roll.

Simple yet delicious. I could imagine how fresh the salmon was. Now I will need to find fresh oregano leaves. I used dried ones here all the time.
