Baked Seafood Mayonnaise and Tobiko

I love this baked appetizer but never have the chance to do it until I get some clean scallop shell.Actually I bring back those scallop shell from Malaysia.My mom cooked "Kam Heong(Golden Fragrant )fresh scallop for me,later she wash ,clean and dry those shell before packed it for me to bring home.Mostly Japanese restaurant serve this appetizer but with different ingredients.I recalled when I was working in Japanese restaurant,every table will order this dish.It's also suitable to go with sake while eating this special meal.Well,the problem with this dish is the waiting period.It's have to make when there is an order and must come out fresh and hot.I come across Nobuyuki Matsuhisa recipe book,he do baked this similar dish but with Parmesan cheese.On Memorial Day weekend I make some sushi with Gertrude and I still have some leftover tuna and salmon,so I figure out I should do something with it before it go bad. This is my version of baked fish.Elliot ,Mishu and MIL love it.They finish all within 10 minutes and asking for more!!


Ingredients:


100 gm Tuna(sliced)


100 gm Salmon( sliced)


25 clean shrimp


1 cup Japanese Mayonnaise


I dash salt


1 dash pepper


2 tbsp masago/tobiko(fish egg)


15 scallop shell(clean)






Method:


1:Mixed together above ingredients in a large bowl except tobiko/masago.Preheat oven at 350F.


2:Prepare clean scallop shell,choose the bottom shell for easy cushion.Scoop 1 tbsp of the mixed ingredients on each scallop shell,repeat until finish.Use a baking tray and bake for 30 minutes or until golden brown.


3:Remove baked scallop shell over seafood from oven ,drizzle some Japanese mayo on top before top masago on drizzle mayo.Use a clean teaspoon to scoop 1/4 spoon of tobiko.Don't top too much tobiko,some brand are quite salty.Ready to serve while hot or warm. Yield 15 scallop shell


This appetizer is ideal for party or formal dinner.We all love this appetizer,quite unique and refreshing.But remember to eat it while it's still hot and warm.Actually this dish is really easy to prepare,no cooking or stirring need.Enjoy eating!!.

    Note:You can use toaster oven instead or regular oven.If you can't find scallop shell,maybe mini tart pan will do.And you can mix any ingredients you like as long as the base must be baked mayonnaise and tobiko.Suggestion ingredients:crab stick(kani),fresh scallop,tilapia,flounder or bass .

    oh this fish recipe reminds me well of my auntie's specialty: baked fish with mayonaisse!! these are great recipes for small gatherings on weekends!! have a nice weekend!!
