Banana & Raisin Cookies

I started practise my cookies baking yesterday.I bake 2 type of cookies at midnight or early morning today .I use my 1000 chocolate baking and dessert recipes book.Actually,I never bake anything from this cook yet,so I might as well try now.For this recipe, I use raisin instead of chocolate..I bought plenty of raisin ,on sale.The result is satisfactory...hehehe!!

Adding mashed banana to the cookie dough of these cookies makes for a really moist texture somewhere between a cake and a cookie.
Ingredients:
4 oz/115 g butter,plus extra for greasing
2 1/2 cups all purpose flour
1/2 tsp baking powder
1 small banana
1/3 cup superfine sugar
1/3 cup brown sugar
1 egg ,beaten
1/2 tsp vanilla extract
1/2 cup of choc milk chip ( I use raisin to replace choc chip)
Method
1:Preheat oven to 375 F/190 C.Grease 2-3 large cookie sheets.Sift the flour and baking powder together.Mash the banana.
2:Whisk together the butter,superfine sugar and brown sugar until soft and fluffy.Gradually beat in the egg,then beat in the banana and vanilla extract until well mixed.Beat in the flour mixture,then stir in raisin or choc chips.
3:Place heaping tablespoon of the mixture on the prepared cookie sheets.allowing room for the cookies to spread during cooking.
4;Bake the cookies in the oven for about 15 minutes,until lightly browned.Transfer to a wire rack and let it cool.
After cool down for an hour,I pack in air tight container to storing
Note:Overall,it's good,maybe I should add in more mashed banana to make it more soft or moist..or banana flavor to get the wonderful fragrant..

I came across cookies recipe using banana but never attempt to try it. How does it taste? I like my cookies crunchy so for me putting banana might soften the cookies.

Perfect! I have some black bananas in the freezer just begging to be used up... this looks like just the thing for Christmas, especially because the hubby doesn't like overly-sweet cookies. Thanks for the recipe.
